Does anyone have any reccomendations for good Vegetarian cookbooks?

I'm really looking for recipes that aren't really 'fancy' or 'gourmet'...I'm just learning how to cook, so I'd like to start with easier things first!

If you have a favourite vegetarian cookbook, please let me know. (:

I learned to cook some wonderful healthy and tasty dishes from a book called "The Vegetarian Epicure" by Anna Thomas. I remember the cauliflower curry being particularly good, and I think she also has a good recipe for eggplant Parmesan, as well as some good desserts.

I got this book as a college student, so the recipes are neither difficult nor particularly expensive.

The best thing you can do is go to the library and take out the vegetarian recipe books. I wrote down the recipes I liked and put them in a binder. I found a lot in the net and wrote those ones down. I began with just a few recipes and now have almost 100. I working on putting them on the computer so I can print them out.

Hi!

"1001 Low-Fat Vegetarian Recipes" by Sue Spitler has been my staple cookbook for a couple of years now. It's amazing. It's about 3 inches thick, and filled with really easy and yummy recipes from appetizers, dips, and soups, to desserts and drinks.

The absolute best is "Vegan with a Vengeance" by Isa Moskowitz. Also, the "Student's Vegetarian Cookbook" is filled with really easy, cheap recipes.
