I am planning to make something yummy for them, few of them don't like seafood.

Here is a menu I serve often:

Appetizers: Chips and Salsa, Hot Artichoke Dip with Blue Corn Tortilla Chips, marinated olives/mushrooms.

Grilled: Chicken breasts (marinate overnight with Italian Dressing) and Grilled London Broil (create a rub of kosher salt, fresh ground pepper, cumin, chili powder, minced garlic, and a little olive oil. Let sit for 2 hours before grilling)

Veges: Grilled zuchinni, yellow squash, egg plant brushed with Italian Dressing; Corn on the Cob with chili lime butter and kosher salt

Salads: Cucumber salad (sliced cucumbers, seasoned rice vinager, a little sugar, hot pepper flakes, and salt); Red Potato salad (diced red potatoes cooked, tossed with red onion, salt, pepper, chopped celery, bacon bits, and a mixture of oil and vinegar); Caesar Salad

Breads: Hot french or artisan breads such as Potato Rosemary, with sweet butter

Dessert: Brownies, cupcakes, watermelon

Add your favorite wines, sodas, and flavored waters and enjoy!

BAKED HONEY MUSTARD CHICKEN

INGREDIENTS
6 skinless, boneless chicken breast halves
salt and pepper to taste
1/2 cup honey
1/2 cup prepared mustard
1 teaspoon dried basil
1 teaspoon paprika
1/2 teaspoon dried parsley


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving.

I would suggest barbecue chicken with either potato salad, macaroni salad, or coleslaw and a nice tossed green salad. Fresh fruit is probably the best way to go for dessert. If you wanted to get fancy, you could melt some milk chocolate and let people dip fruit and cookies in it.

If you're looking for something very easy, you could just make shish kebabs with chunks or chicken or beef and fresh vegetables, such as bell peppers, green and yellow squash, mushrooms, etc. You could even have people make their own and then grill them outside. Then serve it with a light side dish like rice or salad.

I love cold salads, pasta, potato, fruit and seafood. Make bowls of each to place on top of mixed greens. Make a couple of light dressing for everyone to choose from. Light vinegar and oil with lime and sesame seed Yummy

You could go for colour pasta (spirals, shells, spaghetti, whatever) with a fresh-tomato and tuna sauce. Or you could prepare a colourful salad (very finely cut lettuce, grated carrot, sweet corn, finely chopped beetroot-you can make interesting patterns with colours- with salt, olive oil and vinegar) and grill some chicken marinated in olive oil, salt pepper, lemon juice and oregano. Baked (peeled and cut in wedges) potatoes also go well with salad and chicken and they taste great if you actually bake them in the same tray as the chicken-not grill anymore- adding a bit of water so they will not stick to the tray or dry up. Buy Ham, Turkey, Chicken, Lettuce, Tomato, Onion, Cheese, Mayo, Mustard, ect.

Buy Big Sub Buns, let them make their own.

Have a catfish/ crawfish boil. If not, fry up some catfish, make a grrenleaf salad, boil up some summer corn, and ta-da!! Dinner

BBQ idea; burgers, hotdogs.... Vegetarians can dine on Black Bean burgers; my fav! Chips and/or potato salad or mac salad on the side! Cheap and easy to throw together!
