It's summertime - do something with citrus or berries. Strawberry shortcake is always a winner - just remember to toss the strawberries with a little sugar about half an hour before serving, and don't drain off the liquid that leaches out - that's the best part!

This is easy. Get a large watermelon. Cut lenghtwise. From one, CAREFULLY remove the fruit with a melon baller. Be sure to leave the shell intact. Put strawberry ice cream into the shell. Place chocolate chips into the top of the ice cream, giving a unique treat. You will have two dishes to serve.

These bars are gooey and great.
GERMAN CHOCOLATE BARS
50 caramels
1/3 c. evaporated milk
1 box German chocolate cake mix
1/3 c. evaporated milk
3/4 c. butter
1 c. chopped nuts
1 c. chocolate chips
Mix first two ingredients together and cool. Melt butter and mix into cake mix and 1/3 cup evaporated milk. Pour 1/2 of batter (will be thick) in greased 9x13 inch pan. Bake at 350 degrees for 10 minutes.
Sprinkle nuts and chips over cake. Pour caramel mixture on top and spread remaining cake mix over caramels. Bake at 350 degrees for 20 minutes. Cool and cut into bars.

Try this, I love it!
Ingredients:
1 box chocolate mix
2 boxes instant butterscotch pudding
1 tub Cool Whip
Bake chocolate cake. Make pudding, refridgerate for 2 hours.
Crumble chocolate cake by hand into clear glass bowl (for looks) to make a bottom layer. Smooth thin layer of pudding on top. Smooth one layer Cool Whip on top. Repeat until bowl is full. The layers in the glass bowl make for a good lookin treat! (You have to like butterscotch though!)

You can make a really tasty treat using cheese-cake flavored pudding and a graham cracker crust....it takes a whopping 10 minutes to prepare, and about an hour in the fridge prior to serving...plus it's pretty inexpensive.

I love mini desserts. They give you the opportunity to try several different ones and not feel so guilty. I love mini cheese cake topped with different things, caramel, cherry...
Also dipped fruit in either chocolate or cream cheese and marshmellow cream.

Make a few instant cheesecakes or but a few and but some different toppings so that people can have a plain slice or a personalized slice with the toppings you bring.
mini choc chips, chocolate sauce, caramel sauce, nuts, strawberries, blueberries, whatever you find!

serves 6
6 martini glasses
1 vanilla sheet cake
1 can of soup (emptied, cleaned, both ends removed)
2 packs of sugar-free pudding (your choice of flavor, i do chocolate)
1 bag frozen strawberries, semi-thawed
1 tbsp lemon curd
3 tbsp sugar
whipped topping
chocolate shavings (scrape up a chocolate bar)
once your sheet cake cools (or if you bought it pre made) cut out circles with your soup can. YOU'LL NEED 2 CIRCLES PER MARTINI GLASS.
boil strawberries with lemon curd and sugar until syrupy and soft (about 10 minutes). allow to cool and then CHILL.
layer: cake > pudding > cake > strawberries > whipped topping > chocolate shavings
chill for 5 minutes before serving.
if you want to get extra fancy, do chocolate cake, vanilla pudding and put chocolate shavings ontop of the pudding, then more cake, whipped topping and then strawberries.

Something simple like sherbert with fresh fruit (berries, pineapple and sliced bananas) can be pretty, yummy, and no cooking involved, which is great if it's hot. Put the sherbert in glasses with stems if you have them, and let people spoon on their own fruit.
