I've eaten turtle meat, but it was in a stew...so all the other stuff (onions, potatoes, okra, seasonings, etc.) blended together and you don't really taste just the meat. I didn't notice it tasting any different than any other stew made with beef, for example.
I've tasted barbecued rattlesnake meat (at a reptile farm, when I was a kid), and it tasted pretty good...taste and texture about like a barbecued pork chop, as I recall.
I've eaten rabbit and squirrel...and they both have the texture of stringy chicken...but taste a little more gamey.

Most people have also had buffalo andfish
buffalo tastes like upscale beef to me
I love fish- almost all kinds except catfish and carp
Venison is very good (lean but tender), if you can get over the fact that you're eating Bambi
Duck is not greasy if made right.When cooked right, the skin gets very crispy. If it's not made right, it's like very greasy chicken
I've had horse meat in Germany- very chewy
Lamb is good, if made right. If it's not made right, it's either chewy or fatty. I prefer lamb chops. Meat from older lambs and sheep is chewy and tough, and smells bad to me.
Veal is just like tender beef
Rabbit is also good and not gamy
Boar is like a lean and flavorful combination of beef and pork

I am from Australia and here, we love our lamb. It is best to have lamb a little bit on the rare side and it is fantastic. You can get..... lamb roast, lamb cutlets, lamb chops, lamb forequarter chops, lamb steaks, lamb fillets lamb loins. Lamb is best with rosemary and garlic and if you are partial to it some lemon.
In Oz we also like to eat kangaroo. It is very dark and gamey in flavour and if not cooked right can be very tough. We are the only country in the world who eat on of their national animals (as it is on our coat of arms) Venison is another game meat that has a very rich and deep/dark flavour.
Roast Duck is fantastic, but this is another one that needs to be cooked just right. The Chinese do a wonderful job, but I wouldn't have the patience as it takes two days.
One other favourite of mine is the wagu beef. The fat that is marbled through the flesh is fantastic and makes it a very tender and juicy cut and the flavour is to die for. You should try it.
Veal is also a really tender meat. Again it is one of those meats that you have to cook well so it doesn't turn out chewy. I usually take a veal leg steak, bash it out (to break up the fibres so it won't shrink and curl up when cooked) dust in seasoned flour, dip in egg wash and then crumb in fresh breadcrumbs.
I then lightly pan fry on both sides until just tender. Serve with a crisp salad and a wedge of lime.
You can turn this into parmigana with a slice of swiss cheese and a spoonful of your favourite pasta sauce.

I've eaten a ton of meats, all during my worldly travels. Most meats I tried while in Africa or Asia:
Ostrich- very gamy tasting
Oxtail- very fatty
Frog- too dry
Donkey- pretty good
Piranha- Kinda dry
Springbok- has a tangy, gamy taste
Crocodile- really does "taste just like chicken"
Boar-pretty good
Duck- greasy, but tasty. I love ducks too much to eat it again though.
Goat-meh, it's alright
I know I've tried a few more, but I can't remember now. Anyways, trying new meats is fun.

Wild boar (from Australia)-- looks and tastes like beef (more like beef than pork). Very greasy.
Alligator-- white and fluffy (similar to chicken, but it really has a unique taste) Sounds like a strange meat, but tastes good (and I am a midwesterner with very conventional tastes in food).
Rabbit-- not bad. Looks like chicken meat. Tastes like chicken I guess.
Ostrich burger-- tough. Kinda like beef but gamier. Sorry, I didn't enjoy it.
Duck-- greasy poultry.
Foie Gras (goose liver pate)-- tastes much like liver cheese (leberkase) which is a pork lunch meat.
Ox (oxtails)-- tastes like beef

I had ostrich meat and it didn't taste like beef like some say? I must have gotten a good batch cause it was delicious, to me it was like chicken really. Perhaps it was the cut, it was ostrich neck I had. Maybe the other parts taste different. I only ate it cause I had very little choice, but it was the best.......

duck - highly fatning but juicy, tender and nothing like chicken. the taste is not really gamey but richer.
lamb- kinda like beef and cooked in the same ways sort of but like duck its really rich and tender but not always fatting.
quail- like chicken but gamier and much smaller in size.
venison- tender, not always gamey tasting but not really rich eiether. its a lean meat so its a great alternative for beef and can be cooked the same ways.
rabbit - squirel- tough unless you work with it or use just only the tenderloin. but kinda bland. both are some thing that need to seasoned well. but like venison they are healthier than chicken or pork as they contain less fat content and calories.
if you havent tried any of these ( especially the duck and lamb) go to your grocers or a classy restaurant and chow down. trust me its well worth the price. both taste incredible and youll leave pleased and wanting more.

Well, I've tried venison a few times. It is delicious, I am sorry to say (I love Bambi)-lean and although a little hard, rich in a beefy flavor. Lamb tastes like goat meat, but can have a strong smell that takes getting used to. Duck meat is dark red, and when cooked in thick gravy, tastes fabulous! Quail and pigeon meat are similar in taste to chicken. I've heard camel meat is delicious too.

Fried Squid-tasty, just real chewy

Jack Rabbit...I had some when we took a trip to Mississippi to visit my Dad's family. I was 7 and thought it was chicken...it looked liked chicken, it tasted like chicken. But when I heard that it was rabbits...I puked it all backed up and cried for 2 hours over the bunnies. So even today when I go to visit with my Dad's side of the family, I always ask..."This isn't Jack rabbit right?"
