Because they're colloquialisms which express surprise, anger or exacerbation. It's true, they reference that which does not exist.
Why do you continue to discuss movies and television shows? What, didn't you know that those characters don't ACTUALLY exist?

It's just a habit, nothing more. If I see a car on fire, and I say "Holy smokes!" does that mean I think religion has anything to do with it. Of course not. It's just a habit. Do you think people who say "I'll be a monkey's uncle" think that their sister is going to give birth to a baby monkey?"

Why do you think only Atheists say these things? I hear plenty of so-called "devout" Christians say these things as well, including priests and nuns and bishops, as well as people from nearly every other religion out there.
