How much gin did you put? Gin has too much alcohol to freeze, so you have to dilute it a fair bit to get it to freeze hard.

Try to make a Gin and Tonic ice lolly - as there is less ethanol in the mixture it should freeze. THe bubbles from the tonic might give it an interesting structure when freezing.

If you drive a car and live in an area where it gets really cold in winter you put alcohol in the water that is used for washing the windscreen so that it will not freeze.

Alcohol has a freezing point lower than that of your freezer. Pure gin will freeze somewhere below 5 degrees F/-20 degrees C. If you have a deep freezer, that might work to freeze the gin.
