Transubstantiation is a true doctrine and we believe it is the LITERAL body, blood, soul, and divinity of the LORD JEsus CHrist hidden under the appearance of bread and wine. The Holy Eucharist is the same sacrifice of calvary that is represented at the Holy Mass (God can "bend" space and time). God bless.
The following article is about the consecrated host and wine that turned into the real flesh and blood of the LORD Jesus Christ! Check it out, it has pictures. Hopefully, It willl help you come to the truth of Roman Catholicism.

What would have prevented Jesus from changing bread and wine into his body and blood, prior to the crucifixion?
He's God. He created heaven and earth by simply speaking it all into existence.
He spoke at the Last Supper, too. AND THERE IS ABSOLUTELY NO REASON TO BELIEVE THAT HE SPOKE IN ANYTHING BUT THE MOST CONCRETE OF TERMS.

Yes, but in three biblical accounts of the last supper, Jesus said "This is my body / This is my blood." To Jews of that time, that wasn't something to be said and taken lightly. Jewish people didn't have a body/soul seperation concept - a person WAS their body and what you did to or put in your body directly affected you. That is why they had such a long list of kosher laws about food and cleanliness, to keep themselves as people clean.
So no, I don't think that along proves anything one way or the other. Besides, as I'm sure you know, Catholic doctrine is not limitted to what can be "proved" by bible-quarterbacking. (Although scripture has primacy in our faith, esp. with our current pope.)

You have it exactly wrong JESUS instituted THE HOLY EUCHARIST at the Last Supper and JESUS sanctified TEH HOLY EUCHARIST in the Crucifixion. For unless the seed falls to the ground and dies, it remains just a seed. But if the seed falls to the ground and dies it produces much fruit . ..
JESUS is the seed which fell to the ground and died . .. and multitudes are fed from this vine which grew from the seed which is JESUS. This is the MYSTICAL BODY OF CHRIST . .. furthermore JESUS had to die to send the HOLY SPIRIT unto us . .. and THE HOLY SPIRIT makes HIS TEMPLE in us who are in teh BODY OF CHRIST . .. JESUS is the SPIRIT OF PROPHECY . .. JESUS spoke frequently of this before it happened JESUS always knew what he was going to do . .. but it was finally finished in the Crucifixion . .. and so JESUS says "It is consummated" . ..
-LOVE your neighbor as yourself.
Amen.
:Edit: There's a lot to be said about this . .. but it ultimately is an article of faith . .. there's plenty of passages that speak of this .. . that you must eat of JESUS' BODY AND BLOOD . .. the symbolism of the water and blood from the side of CHRIST . .. visions of Saints and testimony of Saints as to the REAL PRESENCE of JESUS IN THE HOLY EUCHARIST . .. And personally, there is no doubt in my mind . .. There are plenty of miracles of bleeding hosts and testimonies on this . .. and i for one KNOW IT by faith . .. this is a mystery of the KINGDOM that will be shown to be TRUE DOCTRINE . .. but i would if i were uncertain as you are, sit before the BLESSED SACREMENT at EUCHARISTIC ADORATION and pray for an answer from JESUS because JESUS IS LITERALLY PRESENT IN THE HOLY EUCHARIST ... JESUS IS PRESENT AT EVERY MASS BODY, BLOOD, SOUL AND DIVINITY . ..

No! The Eucharist is a miracle that transcends time and space. Jesus said "do this in "anamnesis' of me" which is making one aware that this is a miracle outside of time. So no, there is absolutely no indication anywhere in Scripture that Jesus was speaking of a symbolic act when He instituted the sacrifice of the Eucharist. It is a representation of one sacrifice for all outside of time and space..
