Feta (Greek: φέτα, also spelled fetta) is a brined curd cheese traditionally made in Greece with ewe's and goat's milk. Since 2005, feta has been a protected designation of origin in the European Union, and defined as having at least 70% sheep's milk, with the remainder being goat’s milk. Outside the EU, cheeses sold as 'feta' may include cow's milk. Feta is an aged cheese, commonly produced in blocks, and has a slightly grainy texture. It is used as a table cheese, as well as in salads, pastries and in baking, notably in the popular phyllo-based dishes spanakopita ("spinach pie") and tyropita ("cheese pie"). Similar white brined cheeses (often called 'white cheese' in the various languages) are found in the eastern Mediterranean and around the Black Sea. Feta is salted and cured in a brine solution (based on water or whey) for several months. Feta dries out rapidly when removed from the brine. Feta cheese is actually most often made out of sheep's milk, not goat milk. It is also sometimes found to be made out of cows milk in the US as well. But yes, I agree, that Feta is some darn good cheese.

I LOVE Feta cheese, It's even better with a dry red wine and kalamata olives. I most defintely recommend it.

You've got to be kidding! I tried it once at a supermarket and I had to walk across the aisles to the toilets with my mouth full of it and then spit it out into the wash-basin; in fact I didn't so much spit it out as let it just fall out of my mouth rather than let it have any more contact with my highly offended taste-buds.
I swear, that stuff tastes like it came out of somewhere in the goat other than it's udders.
btw, before I turned veggie I once ate pigs brain (brawn) and that tasted pretty good in comparison.

I love it too. I haven't found a pepper jack yet but I have found feta with cracked black peppercorns in it, it's a little spicy and sooooo good!!
