I want to roast some zucchini and squash. Any good recipes? And...(dumb question I know) but when you "roast" them that is the same as putting in a baking dish and baking, right? ;-{ Anyhow, I will just follow directions from you all.........thanks!!!

What I love to do is slice the zucchini and yellow squash into
pieces about 1 to 1 1/2 inches thick. Then I sprinkle olive oil or spray with olive oil. I put on salt, pepper, and Italian seasoning. I mix it up with my hands to be sure all pieces are covered. I bake them in a jelly roll pan so that I have plenty of space to make a single layer. Then I bake it in a 425 degree oven for around 15 minutes. I also like to throw in other vegetables sometimes like: onions, potatoes, turnips, sweet potatoes, red pepper, and cauliflower. You could just put in what you'd like. However, if you do this, be sure the zucchini and squash are thicker pieces. You bake it at the same temp. but for about 40 to 60 minutes for the potatoes to be done.

My recipe for zucchini and yellow squash is simple: I cut each into quarters lengthwise, then cut the quarters into 1/2" slices. I season liberally with salt and pepper, and stir in LOTS of butter. I've tried fancier recipes, but I've never found one that satisfies more. It's flavorful, but the seasonings don't get in the way of the squash, and it's not so strongly flavored that it will overpower your entree. It's super easy, you don't need to measure anything, and the only way you could go wrong is maybe too much salt.

I almost always roast my vegetables. I consider roasting to be turning or tossing something over an open flame or other heat source. I have a roasting basket for the grill from Williams-Sonoma which is essentially an oversized wire basket with a stay-cool handle that closes on top. It works great for the grill, and you can use it over the stove if you have a gas burner, too. If you don't have anything like this, I recommend putting the raw vegetables, seasonings, and butter in an aluminum foil envelope, poking a couple of holes in the top, and setting that on a part of the grill that isn't too hot.

Here is a great recipe I love to have once in a while, and I am not even vegan! Slice your zucchini and squash after you have washed them well. Slice a large red onion, yellow or white can be used if that is what you have on hand. Saute this these vegetables together in a little olive oil with some salt and pepper. Place the vegetable mixture inside a nice baked potato. Yummy!

This is not a roasted version of zucchini and yellow squash but I listed it thinking you might like to try it.

Baked Zucchini Gratin:
1 medium onion, sliced
2-3 lbs. zucchini or squash, sliced
1 stick butter/margarine, melted
2 cups mozzarella cheese
1/2 cup bread crumbs
1/4 cup Parmesan cheese

Preheat oven to 350 degrees. In a greased casserole dish, layer onion and zucchini and season with salt and pepper. Pour a little of the melted butter over this layer. Sprinkle with some of the mozzarella and Parmesan cheese. Mix together bread crumbs and remaining butter and layer over the cheese mixture. Sprinkle with remaining cheese and bake for 35-40 minutes until zucchini is fork tender.

Here's a recipe for roasting veggies of any kind, just use your squash and follow the directions enjoy!!!

6 cups 1-inch chunks small red potatoes and/or other vegetables (Parsnips, carrots, and squash work especially well)
¼ cup pure olive oil
Salt and pepper to taste

Preheat oven to 425°F.
Line a baking sheet with parchment paper (not necessary but helps stop burning and helps cleanup). Put vegetable chucks on pan, sprinkle with olive oil, and toss. Roast until tender; about 10 to 15 minutes. Insert fork or sharp knife to test for doneness. Add salt and pepper.

Roasted Squash Vegetable Medley

1 medium zucchini, cut into chunks
1 medium yellow squash, cut into chunks
1 medium onion, halved then cut into chunks
1/2 pound button mushrooms, quartered or halved
2 tablespoons olive oil or vegetable oil
1 teaspoon poultry seasoning
1 teaspoon salt
1 teaspoon freshly ground black pepper

Preheat oven to 425 degrees F.
Combine zucchini and yellow squash pieces with onions and mushrooms in a mixing bowl. Add oil to the bowl, 2 turns of the bowl in a slow stream. Toss veggies until they are coated lightly and evenly with the oil.

Combine poultry seasoning with salt and pepper and sprinkle evenly over the vegetables. Toss them again to combine and spread them out on to a baking sheet. Place veggies in a hot oven and roast 20 to 25 minutes until tender. Toss and turn the veggies with kitchen tongs half way through cooking time.

i have already gotten a best answer for this one. i simple take the squash cut it up in to1/4 in slices melt some butter, salt and pepper the squash and put into a casserole dish. pour the butter over it and add a can of Campbell's cream of mushroom soup. top off with Parmesan cheese. it is even better as a left over. bake at 350 for 20 to 30 min or until tender.

I have never roasted or baked zucchini or yellow squash but they taste good rolled in cornmeal and fried...I mostly just boil in water and butter and eat it that way but I bet there are some good recipes out there for baking I might just look some up thanks

I don't like roasting them. what i like doing is thinly sliceing a zucchini, yellow squash. and an onion. then you finely chop a few cloves of garlic. lastly you dice a tomato. then you satue that together and bake for about 1/2 hour. I like to sprinkle with parmasn.

At our house, we slice squash in thick slices, dip in buttermilk or canned milk, dip in self rising flour, sprinkle with salt and pepper and fry til golden in canola oil or we slice, brush with olive oil, salt and pepper and grill for a few mins. Yum! Oh, and also, I chunk yellow squash and freeze. Then, in the winter, I dump them into a big pot along with frozen broccoli and frozen cauliflower, add 1 can of low sodium chicken broth (or homemade), a cup of water and simmer for about an hour, turn down to warm and throw in about 6 slices of processed American cheese, stir til melted and serve with garlic bread. Easy, nutricious, cheap and good leftover, too!
