add dried chili peppers to it. you know the ones they give for free at pizza hut? those are good with mac n cheese. [x

Here's a concoction my mother came up with. I know it may sound gross but it really is good. The cottage cheese gives it a unique flavor.
1# hamburger
chopped onion
2 boxes of kraft macaroni and cheese- prepared according to box. I add a little more milk.
shredded cheddar cheese
cottage cheese
Brown hamburger with chopped onion. Drain grease.
While cooking hamburger, make mac and cheese according to the boxes.
Mix hamburger mixture, mac and cheese, extra milk, cheddar cheese, and cottage cheese together in a large microwave safe bowl. I then microwave it for a few minutes so the cheddar cheese can melt. Or you can put all the ingredients in a large cooking pan and let it melt on low for a few minutes.

INGREDIENTS
1 (7.25 ounce) package uncooked macaroni and cheese
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup margarine
3 tablespoons sour cream
1 cup shredded Cheddar cheese
12 buttery round crackers
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Cook the macaroni according to directions on the box. Remove from heat, drain, and add soup, 1/4 cup of the margarine, sour cream, shredded cheese, and the cheese packet from the box. Do not use milk as directed on the box.
Pour in a small casserole dish and top with crumbled crackers. Melt the remaining margarine and pour over the crackers. Bake in a preheated oven for 25 minutes.

SPICY MAC' N' CHEESE
1 1/2 cups finely chopped onion
2 large garlic cloves, minced
1 1/2 tablespoons minced pickled jalapeño chilies, or to taste
1 teaspoon ground coriander
1 1/2 teaspoons ground cumin
1/2 stick (1/4 cup) unsalted butter
1/4 cup all-purpose flour
4 cups milk
1, 28-ounce can plum tomatoes, the juice discarded and the tomatoes chopped and drained well
cayenne to taste if desired
1 pound elbow macaroni
1 1/2 cups coarsely grated Monterey Jack (about 6 ounces)
1 1/2 cups coarsely grated extra-sharp Cheddar
1 1/2 cups fresh bread crumbs
1 1/3 cups freshly grated Parmesan (about 1/4 pound)
In a large heavy saucepan cook the onion, the garlic, the jalapeños, the coriander, and the cumin in the butter over moderately low heat, stirring, until the onion is softened, stir in the flour, and cook the mixture, stirring, for 3 minutes. Add the milk in a stream, whisking, bring the liquid to a boil, whisking, and whisk in the tomatoes. Simmer the mixture for 2 minutes and add the cayenne and salt and pepper to taste.
In a kettle of boiling salted water cook the macaroni for 6 to 7 minutes, or until it is barely al dente, drain it well, and in a large bowl combine it with the tomato mixture. Stir in the Monterey Jack and the Cheddar and transfer the mixture to a buttered 13- to 14- by 9-inch shallow baking dish or 3-quart gratin dish. In a bowl stir together the bread crumbs and the Parmesan, sprinkle the mixture evenly over the macaroni mixture, and bake the macaroni and cheese in the middle of a preheated 375°F. oven for 20 to 25 minutes, or until it is golden and bubbling.

Sprinkle with small amount of more grated Cheddar cheese. Bake at 300 degrees for 15-30 minutes or until cheese is melted throughout. Note: This is an excellent leftover - tastes great reheated. Serves 6.

Well almost anything goes with cheese,,, think of a theme you would like or a trend,,, for instance,,, Thai style might be shrimp and some red sliced peppers, something more Americanized,,, say ham and bacon, sprinkle some bread Crumbs mixed with a little melted butter on top for a nice crunchy topping.
You can make it as simple or extravagant as you like,,, just look through the fridge and be creative and daring,,,

i like to add mustard and/or a little touch of horseradish....otherwise, salsa, or taco seasoning are awesome. but mustard is my mainstay. nice, brown mustard that has flavor AND color is best.
a good way to use up leftovers is to add leftover taco meat, sauteed chicken, etc to mac and cheese, then bake it with bread crumbs and alittle real cheese on top to make a casserole. i'm a big fan of using leftover chicken that way- throw in some frozen broccoli and you're good to go!
