I am making an Elmo cake for my nephews first birthday. I know that shortening is best in buttercream for decorating. Should I use more butter in the frosting to ice the cake and then make a different batch for the decorating with more shortening in it? Or can I use a recipe that is both butter and shortening and use it on the whole thing? What do you think? Let me know. Thanks!

For the decorating frosting you need to use shortening because it is less likely to soften or melt at room temperature and it is able to hold the shapes better that the icing tips provide. With all butter icing the shapes don't come out as uniform and don't hold up as well that I have found unless you are going to keep the cake refrigerated all the time.

I bake and decorate cakes for custom orders...I use the recipe for butter cream icing that calls for 50/50 butter and shortening......I divide the icing and to icing the cake I add a little more milk to give it a softer consistency.......and leave the rest stiff for decorating...good luck

Yes, you're on the right track, decorating icing should have a stiffer consistancy than the base icing.

He's one, and he's a guy... he'll be covered in blue icing in two minutes flat anyway!! LOL
