Water Bath only High Acid Tomatoes. The yellow ones do not have enough acid in them to stop any botchulism that may be present.

Use only disease free fruits.

Don't know, but I have a funny story:

I was visiting a friend. We were two young women, alone at night, in a large house. We were working on a project in the dining room, when all of a sudden there was a loud sound of breaking glass somewhere in the house. Very dramatic! We ran next door and called the cops. They checked out the house and came up from the basement, laughing: My friend's mom's recently canned tomatoes had exploded!

So be careful, or you may find yourself raising a false alarm!

After the water bath, let the jars cool, the lids should pop and when totally cool store in the pantry or basement.
