My hubby (senior citizen) likes steaks, and has a hard time chewing them,.....and I have a difficult time getting them tender enough for him.....so I resort to ground beef.
Someone I worked with fixed him a steak that he could cut with a fork.
What is the 'secret; to a good medium well done steak???? (no pink showing!)

Definitely the tenderloin aka filet mignon is the most tender cut.
Perhaps your friend used a marinade/tenderizer like papaya or pineapple juice or good ole Adolphs Meat Tenderizer, which contains the papaya enzyme that breaks down the tough meat fibres.
Only turn your steak once while cooking. Poke it with a skewer to check that the juices run clear; that is when all "the pink" will be gone. Or use a meat thermometer. Medium well is 155F. You might find those little plastic meat thermometers that pop out when the meat is done are handy...though probably not as accurate as a good meat thermometer.

Filet Mignon is the most tender cut of beef. Next would be Porterhouse, which is a T-Bone with a large portion of the filet, that's the smaller side of the T-Bone.

Even with T-Bone I always use a mallet with the larger "teeth" and tenderize it somewhat. I read somewhere that this releases the lactic acids from the muscle and helps it be more tender.

i love my meat on the grill. Cook slowly Fast cooking it will cause it to loose moisture and dry out.

If he also likes Roast.... Cook one in a crockpot. Or a dutch oven. I always cook my roasts until they fall apart.

I too can not eat "dense" or tough meats. Because I can not chew them into small enough bits, I have an issue with food not getting out of my stomach so it must be chewed very well.

Anyway, Beef Roast cooked until it's ready to fall apart and the Filet Mignon are the best beef cuts for me. If you will email I have a great recipe for Brisket that makes it tender and is wonderful as well..

Get a chuck roast and slow cook it. You can pull it apart with a fork and it's super tender if done right. You can make a meal out of it or sandwiches with the broth as a dipping sauce like a French dip. It's awesome! If you are looking for a cut then probably a fillet is you're best bet but a really great cut is pricey and you'll want to maybe add some flavor to a little marinade. The most flavorful is something like a NY or a Rib Eye but it's the fat marbled in that makes it that way and obviously hard to chew. If he likes those flavorful cuts then get something like Steak Dust and tenderize with it (you don't need much) and some Worcestershire sauce and let it sit for 30 minutes or so. Mastering a great Med Well without it getting tough just takes practice...it's harder when you want it done more. :( Best of Luck...happy roasting. :)
