My grandmother was from Lexington, KY and as a child I remember eating "wild greens", but nobody else seems to know what I'm talking about. I live in Florida now.

Here in Ireland, I have eaten
dandelion leaves raw in salads (a little bitter, better in a sandwich with other ingredients)
chickweed (ditto)
feverfew (ditto - and good for migraines)
nettles (cooked - tasteless but very good for you - add them to stews or any other cooked dish with tasty ingredients)
wild strawberries, damsons, cherries, blackberries, mushrooms

Lots of info on websites, quite a lot of them for the US, but many of the weeds they mention are also found in Europe and perhaps elsewhere. The first reference claims there are over 100 edible weeds in the US alone

When I was a chef here in Canada, I used to get fiddleheads, ramps, mushrooms and wild garlic/leeks, it is as simple as pickling cucumbers.

I used a simple vinegar and salt solution with a touch of sugar, spices are your choice, I like bay leaves, peppercorns even chili flakes. Put them in those self sealing lok top jars and pour the hot vinegar solution over them, then after they have cooled set them in the frig, you can portion them out after they have had a week of sitting.
