BROWN RICE DELUXE
1 c. quick cooking brown rice
1 (3 1/2 oz.) can French fried onions
2 cans mushroom soup
1/4 c. stuffed green olives, sliced
1/4 c. freshly grated Parmesan or cheddar cheese
1 (2 oz.) can mushroom stems & pieces
1/2 c. milk
1/4 tsp. pepper
Cook brown rice according to package directions. Drain and place in a 2 quart casserole dish. Add the onions, mushrooms and olives (but save the juice from the mushrooms). Mix all gently. In another bowl, put the soup, milk, pepper and juice from the mushrooms; set all aside. When ready to bake, pour the mushroom mixture into rice mixture and mix all gently. Bake, uncovered at 350 degrees for 30 minutes. Then sprinkle cheese over the top. Bake 10 minutes more. Serves 6.

Brown Rice and Cheese
1 tablespoon olive oil
1/2 cup celery, chopped
1/2 cup onions, chopped
1/2 lb mushrooms, sliced
2 cups brown rice, cooked
1/2 lb cheddar cheese, shredded
1/4 cup parsley, chopped
1. Preheat the oven to 300F.
2. Grease a 9x13 inch baking dish.
3. Saute celery, onion and mushrooms in oil until tender.
4. Mix with remaining ingredients.
5. Put into greased baking dish and bake for 25-30 minutes.

Rice Croquettes Casserole:
2 cups cooked brown rice
1 1/2 cups bread crumbs
3/4 cup milk
1/2 onion, chopped fine
1 tbsp. olive oil
2 eggs
Salt, pepper, poultry seasoning to taste
1 can cream of celery soup
1 can cream of mushroom soup
Grated cheese
Mix all ingredients except soups and cheese together. Shape into patties and brown in oil. Place patties in greased casserole dish and pour each can of soup over. Sprinkle with cheese and bake at 350 degrees for 30 minutes. (You could also just eat the croquettes as is without pouring the soups over them.)

BROWN RICE BREAKFAST PORRIDGE
INGREDIENTS
1 cup cooked brown rice
1 cup 2% low-fat milk
2 tablespoons dried blueberries
1 dash cinnamon
1 tablespoon honey
1 egg
1/4 teaspoon vanilla extract
1 tablespoon butter
DIRECTIONS
Combine the cooked brown rice, milk, blueberries, cinnamon, and honey in a small saucepan. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
Beat the egg in a small bowl. Temper the egg by whisking in some of the hot rice, a tablespoon at a time until you have incorporated about 6 tablespoons. Stir the egg into the rice along with the vanilla and butter, and continue cooking over low heat for 1 to 2 minutes to thicken.

Just treat it like any rice... Mix it with broccoli & cheddar cheese... Add tomato and a little cajun spice and top with a cajun chicken breast...Mix with ground beef, queso blanco, chili powder, cumin & garlic...
I got a million of 'em... most quick and easy...
