CUBE STEAK ITALIANO
1 lb. cube steak
1 onion
1 green pepper
2 tbsp. oil
1 c. spaghetti sauce
Slice cube steak into strips. Cut onion and pepper into strips. Saute all 3 in oil. Stir in spaghetti sauce and cover and simmer 10 minutes. Serve over egg noodles.

CHICKEN & DUMPLINGS
2 cans of can butter biscuits
1 can Cream of Chicken soup
3 bouillon cubes
1 tsp garlic salt (optional)
3 to 4 boneless chicken breast
Boil chicken breast until done (20 minutes). While chicken is boiling, prepare dumplings.
Roll out can of biscuits on a work surface sprinkled with flour. Make them as flat at you can and check that they have a light coating of flour. Set them aside.
When chicken is done, remove from pan and set aside to cool, saving the water in the pot that the chicken was cooked in. Skim any foam off the surface; you want to make sure you have a good bit of water in the pot, about 3/4 full. If water has boiled off, then just add more. Bring to a boil and add 1 can of Cream of Chicken, 2tbs butter, 3 boullion cubes, 1 tsp of garlic salt. Stir well
Over medium high heat, begin adding dumplings. Tear them into quarter size pieces and drop into the boiling water.
Hint: The less you stir the better they are, so after you add all of them, reduce the heat to medium setting, stirring only occasionally. Add chicken back into pot, tearing into small pieces. Cook until the dumplings are soft; this usually takes 30 to 45 minutes. I promise these are the best dumplings you will ever eat!. Enjoy!

CHICKEN CACCIATORE WITH NOODLES
1/4 c. oil
1 - 3 lb. chicken, cut up
2 pt. jars Spaghetti sauce
1 tsp. pepper
1 clove minced garlic
12 oz. pkg. noodles
Parmesan cheese
Grated cheese
Heat oil in skillet. Brown chicken on all sides. Combine salt, pepper, sauce and garlic; pour over chicken. Simmer covered 25 minutes or until tender. About 10 minutes before chicken is done, cook noodles according to package. Drain. Arrange chicken on noodles. Sprinkle cheese over all. Serves 4 to 6.

Try this

Ingredients

Chicken breast fillets
Streaky bacon
feta cheese
coriander leaves
paprika
Olive oil

Open the breast fillets and stuff with cubes of feta cheese and coriander leaves chopped. Sprinkle with paprika. Close the fillet. Stretch the streaky bacon with the back of a knife and wrap around the fillet in a lattice. If necessary secure with a wooden cocktail stick. Fry the parcels on both sides in olive oil for about 2 - 3 minutes each side until the bacon starts to colour. Place on a baking tray and cook in a hot oven (180 deg C) for 20 - 25 minutes depending on size until cooked through. Serve with small boiled new potatoes, green beans, peas and cubed carrots or a side salad of lettuce, tomatoes, cucumber, onion and peppers drizzled with olive oil and sprinkled with paprika.

How about chicken??
I like the Chicken Wing and Rib variation of this recipe.


Cola Chicken

4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan. Mix together catsup and cola,
pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes. (turning
chicken a few times, while cooking...to prevent from
sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce becomes
thick and adheres to the chicken.(It turns into the most incredible BBQ sauce. Yummmm!)

Variations: Omit (or ‘not’)catsup and add a small jar of Salsa.

Have tried this with Shrimp Cocktail Sauce and using Pop Corn Shrimp…wasn’t bad…but doubt that I’ll make it again.

Have also made this with chicken wings….adding a package of Hot Wings seasoning to mixture…’good’!

I have used Ribs, just as good. (made this several times)

I tried this recipe with 'meatballs'....was equally
as good...served over rice.(maybe a meatball sandwich with swiss cheese….slaw?)

Also have used ‘stew meat’ chunks and served over rice.

(Personally, I like the ribs best then the chicken wings.)
