I think that most colleges kind of look at the makeup of their student body and then determine how many veggie items they think they need to offer. For example, my college has a whole lot of Indian students, many of whom are vegetarian, so the veggie selection at my school is much better than where my brother is going.
It sounds like you might be a vegetarian in an omnivourous campus. My best advice would be to try to locate some cheap local restaurants that might have a better selection, or make your own food. Taco Bell is usually pretty good about altering their stuff to make it vegetarian-friendly if you ask (ex. beans instead of meat, etc.). Good luck!

I went to a college that was very "granola" as we called it back then. Over 1/3 of the cafeteria was devoted to veggie/vegan. I just read my alma mater's quarterly report today. They've gone from 400 food options to over 4000. The food though kind of sucked whether it was veggie or not. But that's what you get with a Marriott/Sodexho food service.

I think you should ask to speak to someone at the college in charge of food purchases and let them know. Many college students are going vegetarian or vegan. It might help if you had some friends from school go with you and show that it isn't just 1 person.

Not nearly enough. There's a nice vegetarian chili but it's only available a couple days a week. An occasional tofu dish. Steamed veggies. A couple other things.

I'm about to enter my junior year at Berkeley. Thankfully, we don't have that problem lol. I gained weight my first year, even after becoming vegan, because of all the wonderful food both on campus and off.

I lived in dorms in grad school and the veggie choices were few and not terribly tasty. The worst was lentil loaf.
