I have rice left over from the chinese buffet. Can i leave it in the plastic container on the counter or will it spoil? when i put it in the fridge it gets hard. How could i keep it fresh the best?

Cooked rice can stay out for maybe a day tops. Try to keep it on the bottom shelf of the fridge. When warming it up in the microwave, first sprinkle some water on top of the rice and cover it with a spill proof top... dont zap the rice more than 1-2 mins... stir if needed.

The problem is that rice has moisture, so it can mold rather easily if it's left in a warm place.

That said you can leave anything out of the fridge for a day or so, if it's a cool place then maybe 2 days.

The reason your rice gets hard is likely because of something setting when it cools, sort of like how jello sets when you cool it but warm it up again and it goes to liquid. I don't know what does this but that's my guess. So consider the next time you put it in the fridge, take it out ahead of time before you go to eat it, you may find that as it goes to room temperature it'll soften again.

Or microwave it, or reheat it on the stove in a pot with a bit of water so it doesn't burn or dry out.

You can leave them in the fridge, make sure you microwave them for 1 minute before serving or if you have a mini slow cooker, you can keep the cooked rice in there, make sure the setting of the slow cooker said "Keep Warm." That way the cooked rice will be last for up to 1 day.

Defininitely the fridge, quicker the better! Rice grows a little nasty bacteria called bacillus cereus. OK, it's a big bacteria that grows fast in cooked rice and grains left out at room temperature even at 2 hours. Even though it looks and tastes fine, you can get very sick. Refrigerate it and save yourself the hospital.

Put in fridge. Add the rice to a bowl with a little water and cover -- microwave until heated. Fluff with fork.

I have the same problem. When you take it out of the fridge, sprinkle about a spoon of water on it before microwaving it. Microwave for about 2 minutes to let all the water soak in and get it nice and sticky again.

Let it get hard in the fridge. Better than stale or fermented outside (unless you like that). You can steam it soft in m/wave or on stove; or simply do what we all do on a daily basis, reheat in electric rice-cooker!

You might leave it out overnight at most. Depending on the temperature. Even refrigerated it will grow sour and/or furry after a few days.

If it has no meat in it at all......from a sauce etc., you can leave it out overnight. You can put it over simmering water however, in a colander or in a steamer straight out of the frig. and reheat it this way.....has more flavor this way too.
