Why do people use gelatin instead of pectin in sweets ?

but umm... you may not have understood the question....
I know what the difference between Pectin and Gelatin is, but I dont know what difference to food that makes.. ?
Umm, lol.. sorry! Im not good at wording things =/
Is there anything specific like the taste of foods ..or... the price of them ?
Depending on whether they use Gelatin or Pectin ?

Pectin requires that sugar be present or it won't turn into a gel, that's an important difference between it and gelatin. In some candies gelatin gets used because the sugar concentration isn't high enough for pectin to gel properly.

In candy items like gummy bears gelatin is used because it's cheaper and that rubber texture is more easily obtained (you need a LOT more pectin to make juice turn to rubber).

While those answers are all true to a point, there are some natural based gelatins that are not made with nimal products like agar-agar and carrenagen, both natural and derived from seaweed a natural non-animal based product.

Pectin is derived fro the skins of fruits, like apples and other soft fruits, and does not contain and animal products, most people will supplement a bit gelatin with pectin to make a firmer jam or jelly.

But you can use the non animal seaweed variety's to, they are more available at Asian stores, just ask for them.

Gelatin is made out of an animals bone marrow so there for it is not vegetarian or vegan. Pectin on the other hand is a fruit based product and has nothing to do with animal flesh/meat.

Hmm, I don't recall gelatin melting in my mouth but I'll bow to Beebs superior knowledge about gelatin since I'm a vegetarian and she (at least) eats dead fish (maybe live ones also?) and so would be much more familiar with animal based products like gelatin. Pectin can work but it's a *pain* to deal with in the quantities needed. I also doesn't work very well unless you've got a LOT of sugar present! If you want to make veggie jello type stuff, use agar in any recipe that calls for the boiled animal part cr*p and use it in the same amount called for in the recipe. 1 part Agar-Agar=1 part gelatin (or in other words) 1tsp Agar=1tsp gelatin I'd give you links to Agar recipes but I'm *sure* you've already got them! Look at the recipes for vegan cheese at above rubies (for an unusual use of Agar) or any of the dozens of recipes at the other veggie recipe sites.

pectin is a natural substance found in fruits while gelatin is a natural substance found in protiens (meat proteins specifically). Gelatin comes from the collagen protiens in animals. I would think the reason why people would use gelatin is just a personal preference... I have seen pectin readily available in stores but have never tried it in cooking anything other than jams or jellies...

Gelatin is made from cows hooves- and contrary to popular belief, it doesn't make your fingernails grow. The others are right; Pectin is derived from fruit. I'd avoid gelatin though. Think about that when you have a hankering for Jello!

Gelatin is an animal protein derived from tendons of bovine.Pectin from fruits like Apple.it is a complex carbohydrate(Poly saccharide of galacturonic acid) the gel derived from Agar-Agar (weed) is not gelatin--Gelatin is fairly costly(in developing countries-I do not know about developed countries) and pectin is cheaper-Agar-agar is still cheaper.All can be used in the preparation of gels.Pure gelatin has higher nutritive value-easily digestable. Vegtable source gels-not that easily digestable-have higher crude fibre content,which is recommended now a days, medically.

Gelatin is derived from animals I think, as opposed to pectin, which comes from fruit.
