Wheat starch is a small component of regular wheat flour. If removed the flour becomes high gluten, which is poor for baking, etc. I would recommend getting the wheat starch since it's a small part of wheat flour, but can really change the flour's consistency.
Tapioca flour and starch are interchangeable, though.

I am trying to make har-gau (Chinese Shrimp pot stickers), and I have wheat flour instead of starch. Also, is tapioca flour the same as tapioca starch. I was trying to make brazillian cheese bread, pao de qeuijo (spelling is wrong) and it calls for tapioca flour, but I have the starch. Thanks!

The tapioca flour and starch are interchangable.
However, the wheat flour and wheat starch may not.

you could also try the TV cooks on line they sometimes do gluten free on ready steady cook, all the Chanel's have chefs and it might be worth a try.These recipes above sound delicious ! good luck!

It would work nicely in bread recipes such as white bread or French bread. It is also easily combined with cornstarch and soy flour. It can be purchased in a health food store. Soy Flour This nutty tasting flour has a high protein and fat content. It is best when used in combination with other flours and for baking brownies, or any baked goods with nuts or fruit. It can be purchased in a health food store. Cornstarch This is a refined starch that comes from corn. It is mostly used as a clear thickening agent for puddings, fruit sauces and Asian cooking.
