I have noticed that vanilla (either flavor, essense or extract) is added to many chocolate desserts. Why?
Does it enhance the chocolate flavor?

Chocolate by itself is bitter. You have to add sugar to sweeten it up and vanilla and acutally coffee inhances the chocolate flavor.

I think that it's just one of those complimentary flavors. We've all been eating the chocolate and vanilla combination for so long that we notice when the vanilla is missing. I think that what really enhances the flavor of chocolate is coffee

Yes, it does. Vanilla extract has no sweetener in it, but enhances the flavor of many chocolate snacks as well as a few others.
Toll House cookies will taste bland and be 'pale' in comparison to ordinary. My sister did it one time by mistake - my mom and two sisters to figured it out in about three minutes.

Definitely enhances! Just try a NO-vanilla chocolate dessert - there'll be a something-missing aspect you can't miss. I've accidentally left vanilla out of things and they just didn't taste really chocolate-y enuf...one flavour lifts the other, IOW.

Some foods use opposite flavoring and ingredients to give the taste an outstanding sensation from the rest of the components.

Either that or it just gives it a little extra flavor to it.

Absolutely! Have you ever for example tried to make chocolate chip cookies without vanilla extract? They end up tasting flat and sugary without any of the richness. :)

I'm taking an educated guess here. But, I think vanilla extract is like a catalyst that hardens the chocolate.

it does, chocolate by nature is actually a little bitter.
