I realize this question has been asked before, but there are none open, and there weren't lots of replies to the other ones. So here goes!

What is your best, personally tried, cookie recipe? ANY kind of cookie. Chocolate chip cookies are my favorite, but I also love apple spice or cinnamon cookies. I need a cookie that is going to make my boyfriend's stepdad clam up about how he never wants to try vegan food, and I really want to make the kitchen smell good!

I've cooked without eggs before, using the baking soda, baking powder, flour, and water recipe, which worked great. Whatever method the recipe calls for works. Thanks everyone!

kaylea, i'm a pacifist, but people like you make me wish im not.

anywho, Heidi, here's a recipe for vegan double chocolate chip biscuits because i'm a chocolate fanatic! so i love this one:

1 cup soy margarine
1 1/4 cups sugar
2 teaspoons vanilla
1 tablespoon molasses
1/4 cup soy milk
2 1/4 cups flour
1/2 cup cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 cup chocolate chips

Pre-heat oven to 350 degrees.
Cream margarine, sugar, vanilla and molasses until fluffy.
Add soy milk and combine.
In a separate bowl, combine flour, cocoa powder, salt and baking soda.
Mix dry ingredients with wet ingredients.
Stir in chocolate chips.
Place dough by tablespoon onto ungreased baking sheet approximately two inches apart and bake for 8-9 minutes.

and whala! yummy vegan biscuits!

I bake this cake, from Veggie Boards, to take to dinners and it has gone over very well.

Ingredients:

3 cups flour (680 grams)
2 cups sugar (450 grams)
6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc's = 10 ml)
1 teaspoon salt (5 cc's = 5 ml)
3/4 cup vegetable oil (200 cc's)
2 tablespoon vinegar (30 cc's)
2 teaspoon vanilla (10 cc's)
2 cup cold water (480 cc's)


Instructions:

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. When cool, frost it.



I use this frosting, from Veg Web, with it.
Ingredients (use vegan versions):

1 cup of sugar
1/2 of a teaspoon of vanilla extract
1/2 of a cup of cocoa powder
2 tablespoons plus 2 teaspoons - 3 tablespoons of vanilla soy milk

Directions:

Mix all ingredients. Use more soymilk for glaze, less for frosting.

For chocolate-mint: add some peppermint extract, you can add less vanilla if you want. Probably 1/8 of a teaspoon, I have never measured, all I know is it is a very small amount, just a couple drops or so.

For the cake, I use whole wheat flour, I put in about ten tablespoons of cocoa, and I use apple sauce in place of the oil. (Which works in almost any recipe.) Bananas (one per egg) and apple sauce (one tablespoon per egg, I think) also work in substitution for eggs in most recipes, though I've heard cautions about the bananas with the recipe tasting like banana.

Anyway, thank you as I realized that I should expand my cooking/ horizons. My parents sister and niece are coming in this weekend as well as my husband's parents, sister, and aunt for our baby shower. I thought about doing a cake, but will also look for a cookie recipe.

Also, do a search for "vegan cookies", "vegan baking", etc.

Vegan Banana Oatmeal Chocolate Chip Cookies Recipe


Ingredients
1/2C margarine
1/2C brown sugar or succanat (i perfer succanat)
3/4C white sugar or cane sugar (i perfer cane sugar)
2t vanilla
1/2 banana
1T soymilk (or water)
3/4C wheat flour
1/8C wheat germ
1/4C bran
1/2t baking powder
1 1/4C quick rolled oats
1 1/4C chocolate chips (use ghiradelli semi-sweet. its very good.)

Directions
Mix well between each step.
Beat margarine and sugars with a fork.
Add banana, mash in bowl.
Add vanilla, soymilk (or water)
Add dry ingredients, mixing some between each addition.
Add chocolate chips. The batter should be almost too dry to hold them. Dry batter=good.
Bake 13 minutes @ 375 degrees F on an ungreased cookie sheet. Longer if you'd like a crispier cookie. Due to the amount of sugar, they can be easily burnt, so keep an eye on the after 14 minutes.
They will be VERY soft and will take a bit to harden. They are a pretty gooey cookie because of the good amount of chocolate. They are great to pull apart warm pieces and use as a topping on ice cream.
