When I make hummous, I prefer to remove the skins/shells from the chick peas. It makes for a much creamier, smoother end result. But, it takes forever!!! Is there any easy way to remove the outer skin of the chick pea? It seems like the lebanese restaurants must remove it because their hummous is always so smooth!

You don't need to remove the skins for a very smooth and creamy hummous. The mistake that people make is using a food processor to blend the hummous. This gives a somewhat grainy result. You should use a blender and blend the recipe in small batches until perfectly smooth. This will get you the result you want. Just make sure the beans are very soft before you blend them. Believe me, Lebanese restaurants DO NOT remove the skins from garbanzo beans. I live in the Middle East and live right above the most popular Lebanese restaurant in town. I asked them this question and they laughed!

I'm not sure, but I would probably put them in boiling water for a few minutes until the skin is loose enough to be removed.

If it's in the food processor for long enough it will be that smooth, even if you dont remove the skin

use a food mill for large batches the bean meal gets pushed through the screen and the skins stay in the mill.

use a brand new dish cloth and rub them..the skin come off easily. But I find that you can't tel lthe diff if you use a processor and blend a long time...
