I know it has rice in it, but what should I eat with this sausage for dinner? Or should I eat it by itself?

Sure have.

There's the good old favorite Boudin, then there's .....

Alligator
Chicken
Beef
Meat with Pumkin/Sweet Potato/Yams and Nuts.
Apple/Pork (yes apple)
Some came with vegetables, rice and meat.
Hot, Spicy, Mild and then some.

and anything else you can festered up and blend in.

It goes good with "dirty rice" aside the "Red beans and Rice" It has rice already inside..........But it can be used as a main meat source. ....actually anything you eat a sausage to. You can kick a Boudin to.
Get a vegetable going on with them....Collard Greens etc.

Boudin is a sausage made with pork, pork liver, rice and spices, there is white and dark boudin.

The main difference is the spices and the addition of some pork blood, like with the English blood pudding.

As it is fully cooked is is just something you warm up, some like asa breakfast dish or a dinner main, I worked with a number of Cajun chefs, and I worked in Canada in the are they originated from.

Side dishes can be red beans and rice, home fries, collard greens, sweet potatos or an okra stew, like any other main dish meat build you meal around it.

Baked sweet potatoes with a little bit of brown sugar, butter, and cinnamon would be delicious with boudin. Or red beans slow cooked with some ham hock and onions for flavor would be a nice side, too.

Yes and it is so good. I miss eating boudins, omg, you have no idea how good it is. Anyway if that was not enuff drooling ... new orleanians (I am one by the way) usually it alone or the older generations may eat it with bread. Usually you don't eat it with anything ... its like an appetizer (to give you an idea of how it is eaten).

I have never heard of that. I have heard of Louisiana Hot Links (don't know if they are really from Louisiana) and I love those. I eat them with rice.

Its good anyway you'd like. Make sure you have plenty of napkins. I usually serve it with fried sweet potatoes.

i've heard of it. i'm from tx. eat it with crackers. it's very spicy though.
