Of course you can. Having herpes does not prevent you from doing anything that someone without it can do. It is just a virus that causes the common coldsore. 90% of the population has some form of herpes. It is no big deal.

The only thing that is gonna keep you from being an xray tech is if you have a criminal record.

Yes you can have a healthy and full filling life. Just because you have been diagnosed with herpes does not mean you can not pursue your dreams.
