Vegans should eat vegetables (especially mushrooms and spinach for the iron), fruits, breads, grains, nuts, legumes, tofu, soy milk (made from soy beans), dark chocolate etc. Vegans should also take supplements, especially VITAMIN B12 (as this is a vitamin humans can also get from eating meat). As a vegan something that I must always have in the pantry is peanut butter. Some of the major supermarkets are now catering to vegan needs so a number of products may say "suitable for vegans" on the label. Ths helps with adding variety to the diet - especially when companys bring out meals such as "not chicken" or "not hot dogs".
Another thing to mention about taking on the vegan lifestyle is making sure everything you use or wear is animal free. No leather boots or leather briefcase, no fur skin coats, or lambs wool ugg boots as these have been made from animals.

Well to answer that question might take a long time. If someone asked an omnivore what they, eat they would say, "That's silly, I eat everything. You want me to run down a list of everything I eat? That would take days." The same applys to vegans. Often people want us to sum up what we eat in one or two words, but the fact is most vegans eat a MORE varied diet than omnis. It is much faster to say the things we don't eat, which are animal products and byproducts.

I like Nilika's answer =) I'm a fruitarian... we eat alot of differant things, I eat alot of fruit most american's have never heard of. I also eat raw grains thou, such as sweet brown rice, wild rice, teff, and quinoa. "As farms have become more industrialized, animals have become more of a commodity. They are considered units of production, rather than living, breathing beings, and as a result these animals are treated inhumanely." -I live by this stuff!

Generally they are enjoyed better because the vegan knows that it is healthier for them and they do not have to be plagued with guilt knowing that they just put a piece of dead animal flesh in their mouth.
Many vegans also consume soy milk, although rice milk and almond milk are also consumed.
Vegans can dine out at most types of restaurants... Indian, Thai, Chinese, and some Mexican restaurants offer many options for vegans, and other types of restaurants usually offer something a vegan can have.
Vegans can also have potato chips and many candies, unless they contain dairy, eggs, or gelatin.
Many vegans enjoy desserts. They have vegan ice cream at most supermarkets, and some bakeries make vegan cakes and cupcakes. It is also pretty easy to make vegan desserts at home, by just using soy milk instead of dairy milk, and 'egg replacers' instead of eggs, a dairy-free and trans-fat free margarine instead of butter.
Most vegans enjoy a very well rounded, healthy, and very diverse diet.
