Okay here are some awesome meat substitutes...
For:
Breaded chicken patties.... Get Boca breaded chick'n patties
Chicken strips - Morningstar farms chick'n strips (comes in a green bag)
Steak strips - Morningstar farms steak strips (also comes in a green bag)
Italian Sausage - Tofurky Italian sausage
Grilled chicken patties - Gardenburger Grilled chick'n patties
Deli turkey slices, deli ham, other deli meats... Yves and Tofurky brand (these taste only so-so when eaten by themselves but taste awesome when eaten in a sandwich. Just like the real thing!)
For a turkey roast - Tofurky brand again
Pepperoni - Yves pepperoni slices (awesome tasting.. work great on pizzas)
You can find all of these generally at Safeway or any other local grocery store.. and if you have a health food store somewhat close to you they will definitely have a lot of those.
The Safeway that I go to has all of the above brands that I mentioned.
Oh, and you just cook the meat substitutes like how you would cook the actual meat. You can microwave it, fry it, grill it, whatever.
Good luck!

You should be able to find Morningstar or Boca in just about any major Grocery Chain. The Kroger's usually put them in the frozen section near the frozen breakfast food.
In general if you are using a ground meat substitute you just make what you were making - chili, Spag Sauce etc. Same as you would normally and just put the substitute in. They don't really need to be cooked just heated up.
In the case of other items like "sausage" links, patties or veggie burgers, chick patties, chick nuggets you can heat them in the microwave per the box directions.
There are also some other brands that make ones that are like chicken breasts that can be cooked in a pan or on the grill like you would a chicken patty.

Morningstar Farms products, while low in cholesterol, are high in sodium. Some of their products have egg whites. I like many Light life, White Wave, and Veat Products. It might be worth the trip to Whole Foods once in a while to load up on some of these products. They freeze well.

Here's a list of good meat substitutes: http://www.vegcooking.com/guide-favs.asp (it starts at "Beef Substitutes").
The package should explain how to cook it.. usually you can heat it by microwave, but sometimes it's better in the oven or a frying pan.
My favorites are: Morningstar Meal Starters Chik'n Strips, Tofurkey Deli Slices, Nate's Meatless Meatballs, Boca Chik'n Patties, and Gardenburger Flame Grilled Chik'n.
Good luck!

Most of the meat substitutes can be found in any supermarket. I get mine from Shop & Stop, its in the organic, healthy section of the supermarket. In bother of the shop & Stops by me they are in the last isle along the wall.
In other supermarkets I just find them mixed in with every other frozen food.

Textured vegetable protein is a very good meat substitute. It can add texture to other foods, and it will take on the flavor of whatever you cook it with, so it's very versatile. Check out the links below.

Be careful, alot of meat substitute is made with wheat gluten. I love the stuff, but with the problem with China, I am waiting until FDA shore up our imports. I also use TSP, Its great to soak up juices. It's made with Soy. I prefer Baca burger.
