No not at all. Generally they will have more than one item, and try to have any "specialty" items, but they don't have everything. Maybe a few of each courses.

I wouldn't think so. More like they check out the menu see if there are healthy foods on there, maybe how quickly they get service. If they make a complaint see how the wait deals with the problem. Check out the restaurant itself, like seeing if it is safe no bug or rat problems. And maybe lastly the quality of the food. If it tastes like its supposed to, is it what they asked for. Was it prepared a certain way. I'm not real sure on all this, but I have seen a few movies that had the critic doing it that way. It may be the right way, not sure though.

No they usually go with a group of family and friends and make sure that there is a representative selection on the table. They sample a little of everyone's (since they are paying for it all). They usually go back a few times, particularly if a place is new and the kitchen and wait staff are not quite tuned up.

But if there are six lamb dishes on the menu they positively do not make sure they eat all six.

No friend, they don't. Just a few chosen items.
Food critic" has a more contemporary vibe, suggesting that restaurants, bakeries, food festivals, street vendors, and taco trucks are all fair game.
