Being Italian that is very easy so for Italian style ..make a pasta dish (this you have a million choices including veggie lasagna) ..........second have a brown rice dish with sauteed veggies as bell peppers , onions, zucchini , etc etc on top ........... people love eggplant ..you can parmigiana with a vegan cheese .......... have veggie meats as sausage and peppers ..or veggie steak strips with caramelized onions .. and how about stuffed peppers /stuffed mushrooms.......... if you like Mexican you can make a veggie chili with corn bread .. and a new favorite of mine veggie BBQ riblets !! ..(just found out about that) , fresh mashed potatoes or a potato casserole everyone likes .. have a great salad and assorted breads .. you could also make an international meal with one dish from different countries..one Indian, one middle eastern, one Italian, one french , one Chinese ..etc.. that would be fun for all .. there are soooo many veggie meat substitutes that you can give omni's ..why not let them try something new and healthy ? Good food is good food, but I would not serve meat of any form ..as a matter of fact at my vegetarian wedding I had it catered french and everyone commented how great it was.. .. My family Loves to eat and I easily fill them up with Vegan foods with no complaints ..if you need more suggestions email me..

I am loving the idea of the Italian theme. There are a lot of choices there.
I wouldn't bother serving a meat dish. If people can't skip meat for one meal they have serious issues. If you REALLY want to, I'd serve chicken. Even when I ate meat I didn't eat fish.
Another good idea might be to go with an Asian food theme. You can do vegan sushi, tofu dishe, stir fried veggies, noodle salads, green salads with Asiany stuff lke crunchy noodles, snow peas, sesame seeds, etc. It's also relly easy to do a VEGAN buffet so you don't leave out all your/their vegan friends.
If you do go with Italian I would suggest you be sure to include some vegan dishes as well - don't put cheese and cream in everything!
Googling will get you recipes for all that stuff.

i make this wonderful orzo dish that meat eaters and veggie's alike go nuts for. simply cook up some orzo rinse it in cold water, put in a serving bowl, add some extra virgin olive oil, squeeze in some fresh lemon/orange juice and zest from the orange, and some dried cranberry's and toasted slivered almonds. chill it, serve it enjoy.
sorry i don't have a complete menu, but this would be a great side dish, and you wont have leftovers.

Vegetarian Pasta
INGREDIENTS
1 (15.5 ounce) can great northern beans, rinsed and drained
2 cups hot cooked angel hair pasta
3 tablespoons butter or margarine
1/4 teaspoon garlic salt
1/4 cup shredded Parmesan or Romano cheese
Minced fresh parsley
DIRECTIONS
Place beans in a microwave-safe dish; cover and microwave on high for 2 minutes or until heated through. Place pasta in a serving bowl. Add butter and garlic salt if desired; toss until butter is melted. Add beans and cheese; toss to coat. Sprinkle with parsley. Serve immediately.
Vegetarian Spaghetti
INGREDIENTS
1 (16 ounce) package spaghetti
1 cup chopped onion
1/2 cup chopped celery
1 teaspoon garlic powder
3 tablespoons vegetable oil
1 (26 ounce) jar meatless spaghetti sauce
1 (16 ounce) can garbanzo beans or chickpeas, rinsed and drained
1 (14.5 ounce) can diced tomatoes with garlic and onion, undrained
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 bay leaf
1/4 cup grated Parmesan cheese
DIRECTIONS
Cook spaghetti according to package directions. Meanwhile, in a large skillet, saute the onion, celery and garlic powder in oil until tender. Add the spaghetti sauce, beans, tomatoes, sugar, salt, oregano and bay leaf.
Bring to a boil; cover and simmer for 10 minutes. Discard bay leaf. Drain spaghetti; top with sauce and Parmesan cheese
Vegetarian Quiche
INGREDIENTS
1 (9 inch) unbaked pastry shell
1 1/2 cups chopped onion
1 medium green pepper, chopped
1 cup chopped tomatoes
1/2 cup chopped zucchini
1/2 cup sliced fresh mushrooms
2 tablespoons butter or margarine
1/4 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
Pinch ground cinnamon
5 eggs
1/4 cup milk
1/4 cup grated Parmesan cheese
DIRECTIONS
Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 degrees F for 5 minutes. Remove foil; bake 5 minutes longer. Reduce heat to 350 degrees F.
In a skillet, saute the onion, green pepper, tomatoes, zucchini and mushrooms in butter. Add the curry powder, salt, pepper and cinnamon; mix well. Spoon into crust.
In a bowl, beat eggs. Add the milk and cheese; mix well. Carefully pour over vegetables. Bake for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

I would suggest some potato dishes, there are delicious recipes available, if you have meat eaters, you might have meatballs available and of course lots of salads

If it's your wedding and you want to stay true to who you are, don't include meat, especially if you don't want to pay for it.
Whole wheat pasta with tomato sauce is generally people pleasing and cheap. If you want to do meat, just have meatballs in a different serving container so people have options.

for the meat eaters, you probably want chicken because a lot of people like chicken..with seafood, things could get a bit out of hand. and you should definetely have Bruchetta for appetizers, everyone will love it. i worked at a catering event and we served bruchetta at a wedding..and everyone asked for seconds.. you could also have stuffed mushrooms.
