I am planning a surprise party, bbq "luau" for my mothers 50th birthday. I am having a bit of trouble planning the food.

So far i am deffinately going to have chicken and beef kabobs that i found GREAT recipes for. I am also going to make twice baked potatoes, ramen noodle salad, regular salad, Appetizers: cheese puff/bites, pizza snacks. I am trying to make alot of finger-ish type foods b/c it is going to be in a very small backyard.

I want it to be great b/c i am inviting ppl from my mothers job as well as my own. I also have an uncle who is coming who cannot eat anything with dairy. Is there anything i can make that would be elegant/fun and has no milk in it? I was thinking about pizzas on the grill w/sauce and vegetables almost like a vegan pizza. Any other ideas would help! Thanks so much :)

* i kind of want to keep the luau theme, i am very big on the pin up girl /50's style, so its going to be a bit vintage as well. Hope this helps*

Fruity Pineapple Boats with Creamy Lemon Dip
June 10th, 2007
1 whole pineapple
1 cup honeydew melon, cut into bite-sized chunks
1 cup strawberries, cored and sliced in half
1 package (4 ounces) light cream cheese, softened
1 container marshmallow cream
1 teaspoon lemon juice

To make pineapple boats: Cut the pineapple (including the crown) into quarters. Cut the fruit away from the rind, leaving a half-inch outer layer.
Cut pineapple fruit into bite-sized pieces. Measure out 1 cup pineapple chunks and set aside. Cover and refrigerate remaining pineapple for other recipes.
Meanwhile, in a medium-sized mixing bowl, combine cream cheese, marshmallow cream and lemon juice. Beat with an electric mixer beat until smooth. Spread creamy mixture onto pineapple boats. Top with fruit.

Well in addition to the beef and chicken kabobs, why not add a veggie kabob, or a seafood kabob. Or both! Shrimp with pineapple and peppers and onions is nice. And for the veggie you could use summer squash, zucchini, eggplant and mini tomatoes! That will stay within your theme, and be really easy to add on. It sounds like you have a good menu so far!

Ribs would be a good addition, luau's usually serve pork. Spring rolls would also be a good appetizer, how about a fresh summer fruit salad?

You could make some sweet and sour "Hawaiian" chicken wings. Fruit kabobs are also very nice.
