What is a good vegan dinner that you can make out of tofu, vegetables, pasta or rice, in any combination?

One of my favorite things to experiment with in the kitchen is a bunch of assorted veggies! No matter what veggies you seem to put together makes a fantastic stir-fry. Stir-frying has opened my eyes up to so many veggies that I never would have eaten. Some of the easiest have been zucchini, bell peppers, carrots, asparagus, broccoli, kale, etc... Experiment with different fresh herbs like cilantro or basil. I usually only use extra virgin olive oil and a lot of garlic, but there are a lot of marinades out there that really change your dish around. Serve it over a little brown rice or jasmine rice and you look like a real chef. Another great idea is to make your stir-fry a veggie taco- same ingredients just in a taco shell. Really easy and great flavor!

Well, you have to be careful of the pasta because there might be egg in there.

Other than that, I would say to make a yummy stir fry. I LOVE tofu sauteed in olive oil, balsamic vinegar, and Spike. Then quickly stir fry the veggies and dump over rice. YUM!

By the way, someone recommended a recipe with mozzarella. Im assuming you know that isnt vegan.

Try to do something more imaginative than chopping it up into bits and frying it to make vegetable fried rice. You'll lose friends and make enemies.

Tofu looks like whale snot. Who would eat that?

How about an old fashioned pasta salad? Now that would be good.

Tofu and Tomato Bake
10oz firm Tofu, medium diced
4 tbsp olive oil
1 clove crushed garlic
2 tbsp fresh Basil, chopped
10oz pasta shapes
1 courgette (zucchini), medium diced
1 pepper, medium diced
1 tin chopped tomatoes
2 tbsp tomato puree
1 tbsp red wine vinegar
4oz black olives
Mozzarella
Salt and pepper
Place tofu, basil, salt, pepper and olive oil in a bowl and soak for 30 minutes
Cook pasta as advised on the packet
Put tofu and marinade into a saucepan with pepper and courgette, cook until softening
Add tinned tomatoes, red wine vinegar and tomato puree to pan and cook for 10-15 minutes
Turn off heat and add pasta and olives to pan
Mix and taste
Pour mixture into an oven proof dish and cook for 20-25 minutes at 200°C

You could make japanese tempura with a sweet chilli dip. Or sate with peanut sauce (Indonesian)
I'd skip the pasta as I personally think it goes so well with dairy e.g cream and cheese, and always seems a bit naked without either of them.
Check out Indian, Pakistani and especially Bangladeshi cook books as many people from those countries are not meat eaters. Chinese food has a zillion things to do with Tofu. Bon Appetit!

Well you can saute up the veggies in some olive oil and basil (and some garlic!) and toss with your pasta - I love veggies and pasta!
Or saute up some garlic and/or ginger with some scallions or onions, add veggies and chunks of tofu and stir fry...add a little soy sauce, a pinch of cornstarch to thicken it up and serve over rice!

I'd chop up the tofu into tiny piece and make vegetable fried rice.

for me this would have to be golden fried tofu, wok-ed up veggies with a coconut curry, over rice. one of my favorites!
