It doesn't 'stink', it has it's own aroma just like anything else. If you find it unpleasant then that's a matter of taste. Personally I can't stand the smell of garlic. It makes my mouth dry and I feel like throwing up. I really can't understand why people cook with and eat it. After all up to about 100 years ago the juice was used as floor disinfectant. Ugh. The aroma of anything is just personal preference. I love salt and vinegar sprinkled on chips (French fries). Delicious. There are many types of vinegar, malt, balsamic, clear, pickling etc, some of which have hardly any smell and others far stronger.

I think because it's fermented, as in apple cider vinegar is fermented apples, that's why it stinks.
