SALSA CORN MUFFINS
1 cup yellow or blue corn meal
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 teaspoon salt
3/4 cup buttermilk
1/2 cup salsa
1/4 cup vegetable oil, Crisco or butter
2 teaspoon honey
1 egg
1/2 cup cream style corn
1 teaspoon finely chopped jalapenos (seeded)
Preheat oven to 375°F.
Grease 12 small muffin cups or use cupcake liners.
In a large bowl, mix corn meal, flour, baking powder and salt.
In a separate bowl, beat together milk, salsa verde, oil, honey, and egg. Stir liquid ingredients into dry ingredients, mixing only enough to combine. Stir in jalapenos and corn.
Bake 20-25 minutes, or until golden brown.
Variations:
Substitute frozen or canned whole kernel corn for cream style corn. Add 1/2 cup of 3/4" cheese cubes. Add 1/4 chopped red bell peppers.

Salsa makes a great topping for baked potatoes and its much healthier than butter or sour cream. Also try it in burritos, Mexican corn, and quesadillas. You could also make another great dip for chips by adding nacho sauce to it. It would probably also be good to cook rice in if you mixed it with cream of chicken soup since I just tried a similar recipe yesterday with rotel and it was yummy. It's called Easy Spicy Chicken and Rice and I got it from allrecipes.com. I'd look at allrecipes.com for more suggestions. Click on more searches near the top in the orange bar and you will find an ingredient search option that will let you look for recipes that include salsa and whatever other ingredients you want to use. It comes in really handy when you have very little in your fridge/cupboard :) Word of advice: read the reviews before cooking a recipes so you can see the suggestions from others.

In Mexico we use salsa for lots of things. For starters we use it instead of ketchup on fried eggs, just in greater quantities and with a slightly fried tortilla underneath and we call it Ranchero Eggs, served with refried beans. We also make green salsa in addition to red, we have plenty of chiles here and many recipes. We pour it over meat, chicken, in quesadillas, over grilled meat tacos. You have to be Mexican to understand this. No taco is complete without salsa and in many taco businesses the salsa is the soul of the place, without it, well, it a taco seems to lose some of its flavor.
In Mexico we also enjoy plain soft tortillas with salsa and some salt as an appetizer in many households. Nobody eats it plain, it would be like taking ketchup straight from the bottle.

Mix 2 measures of salsa with 1-2 measures of V8 juice or tomato juice. Add 1 teaspoon Italian Spice mix for every 4 cups of this mixture. Serve hot over hot paste or use as the sauce for a lasagna. Or add 1 measure of water to the original mixture, stir in some diced potatoes or pasta and 1-2 cups of meats and serve as a hot soup. Engage your imagination!
I prefer the V8 version.

I like to mix a few spoonfuls into some black beans and eat that, the hotter the better. Black bean tacos are good also, I put 3 spoonfuls of black beans in a warm tortilla with homemade salsa and a little sprinkle of cheese. You can put some salsa onto salad, like have leafy lettuce, some cold beans (black, pinto or red), tomato slices with salsa on top like salad dressing and a little cheese if you want. There are a lot of ways to use it, but most involve high fat or calorie things like cream cheese and salsa wrapped in tortillas or putting it on top of avocados with melted cheese.

i like to take equal parts velveeta and salsa and nuke until velveeta melts. stir and dip potato chips in it or dip my chicken nuggets/tenders in it.
also add a cup or so to your favorite veg/beef soup.
top a meat loaf.
add some to stewed tomatoes
take some scrambled eggs, wrap in a tortilla add som shredded cheese and beef top with salsa and sour cream
add to chili
take a boboli crust slighly drain salsa, put on top of crust. top with pepperjack cheese bake until cheese is slighly brown and bubbly.
dip your garlic bread in it
top off a good roast (beef or pork)
i've even taken a jar,topped chicken pieces with it, and baked it served with white rice and refried beans
put some in spahgetti sauce for a little kick
puree it and drink it in tomatoe/v8 juice or bloody mary's
experiment and let your imagination run wild

its great on tacos, personally i love it on flamin' hot cheetos, but only with a well blended salsa (no chunks). you could also put in on top of a tortilla, with shredded chicken and cheese, then put it in the oven for about 8 minutes at 375, somewhat like a quesidilla.

You can use as a healthier dip with carrots, celery (like a spicy Bloody Mary!).
You can also use as a salad topping - we'll have a "taco salad" minus the shell - taco meat, cheese, romaine lettuce, sour cream, and salsa.
You can use as a nice compliment to grilled fish or chicken.

You can put it on top of chicken and bake it for 20-30 minutes. I have another receipe that includes chips, chicken, cream of mushroom & cream of chicken, SALSA, cheese and olives. Let me know if you would like it.
