Vegetables are quite versatile and anything you might eat with meat can be adapted to a meatless / vegetarian variety.
Some examples include : Veggie stir-fry, Vegetable stew, stuffed tomatoes with rice, nachos are excellent and really don't require meat to make them supreme. Others could be: Vegetable tureen, cucumber sandwiches or any kind of veggie sandwich ( croissants are excellent for this) . And what about breakfast potatoes with onion and green peppers?
At the restaurant where I work, many folks are very happy when I make veggie Lasagna :o)
Be open to the possibilities and just switch the ingredients to omit the meat and you will be surprised at what you can make and eat in a vegan menu.

Go to the health food aisle at woolworths or coles and buy tvp mince in a blue box and you can make spaghetti bolognaise lasagne mince stews sheperds pies etc be sure to wash the mince several times with hot water to make the mince bland or it will have a strong soy flavour which will overtake the rest of the flavours of your dish.I use this mince often and it is alot cheaper than meat and when washed thoroughly you cant tell the difference!When becoming a vegetarian and if you are fussy it can be boring until you find out how to have all your favourite dishes vegetarian style.When eating out try felafel donar kebab or vegetarian pizza they are nice.

Any Roast, Boiled Or Steemed Vegetables.

I Recomend Jacket Potatos, Beans On Toast, Tortilla De Papa( Kind Of A Potato Omelet), And Pastas.

Everything but meat. My wife is vegetarian for anything warm-blooded, so she can eat fish, but there was a time when she wouldn't even do that. Most vegetarians lack protein so you want to eat any high protein vegetables such as beans and lentils. Mostly you can find textured soy protein made into imitation meat at many grocery stores or heath food stores. I am a meat eater and in some dishes I can't tell the difference between real ground beef and the imitation, the imitation frankfurters, sausage and bacon are also good.

Go to a big bookstore and buy a vegetarian cookbook. Lots of recipes for pasta dishes. If you are of the extreme vegan type who won't eat anything using eggs, milk or any animal product, then you need to get a life and stop being soft-headed.

Nuts, Legumes,Wild & Brown Rices, Whole Grain Pastas, Quiona, Oats.....as well as all the fresh veggies & fruit you can stand.
Tonight I had for dinner:
2 cups of fresh raw veggies salad(Romaine, Spring Mix, Cukes,Artichioke hearts, Beets)
1oz. Brown Rice pasta with Tomato based sauce with oven roasted, Asparagus, Bell Pepper & Spring Onions.
For dessert I had a serving of Dark Chocolate

near enough anything you can think of, pasta pizza roast dinner anything except meat and there are some really good soya based meat alternatives around now. try the vegetarian section at your local supermarket if you are stuck for ideas. there are usually some pretty good recipes about if you have a look at some other peoples questions.

Besides that, she can take ANYTHING you are used to eating and give you a recipe for a good vegetarian version of it.

You can't go wrong with Chef Deb's help. There are wonderful recipes and people at her Vegetarian Recipes site. (She also advises people who want to make their food vegan or gluten free or sugar free or you name it!) :)

Good foods to eat: Morningstar Farms brand food. They make everything meatless from breakfast sausage (very good!!) to chick'n nuggets (also amazing!). You'll find those in the freezer section of the grocery store.

I also love the Smart Slices. (like lunch meat) The "ham" version is the only good one. The "turkey" version tastes like mayonaise. Smart Dogs (like hot dogs) are also very very good. You can find this "Smart" food in the produce section of your grocery store.

Good luck, and thanks for caring so much about animals!! Oh, and if you ever feel like "I'm not making any difference!" just watch one of the peta movies. Also remember that one person saves over 90 lives a year by not eating meat!

Go for protein rather then sugar to keep energy levels going strong instead of crashing. Edamame in pods would be the perfect snack since it takes a while to eat and a one-cup providing offers 12 grams of protein.
