Is blue cheese one of the unhealthiest kinds of cheese? I am not talking about fat, but about the mold culture that's in there. I heard that mold can be even cancerogenic. Is it true of blue cheese? (I am a blue cheese fan).

Yes the cheese can go bad. Also, Blue Cheese does not freeze well. The mold is penicillin fungus, but other fungi can grow on the cheese, some of those are potentially dangerous. I bought some Blue Cheese in Illinois quite a few years ago while travelling. We refrigerated it on ice, but after a few days it was inedible. The white part of the cheese turned yellow, and the stench...whoo it was bad!

Mold in your bathroom is bad. Green mold on the surface of your cheese is bad. Blue mold innoculated on purpose to make blue cheese is good.

Just like ppl think all bacteria are bad. Nope. If you had no e. coli in your gut, you couldnt' digest and absorb yoru food. In teh same way, all mold is not bad. It's certainly not carcinogenic.

Blue cheese is fine for you, if you like the taste.
Try Saga at room temperature - it is great with some fruit.
People have been eating this without injury for many, many years.
