An amazing recipe for slow roast tomatoes and home made cheese.
Cheese-
500g Greek Yogurt
1 teaspoon Sea Salt
1 clean Jay cloth

Mix yogurt and salt. Place cloth over a sieve and pour yogurt into cloth. Leave in fridge for a minimum of 6 hours.

Toast -
Baguette
Olive oil

Thinly slice baguette into 12 pieces and drizzle oil on top. Toast Both sides in a grill pan.

Tomatoes-
Good quality plum tomatoes
Basil
Garlic
Thyme
Salt

Pre-heat oven to 150 degrees.Cover baking tray with Basil leaves. Cut tomatoes length ways in half and arrange on top.Sprinkle Garlic, Thyme and salt on top of tomato.Place in oven for 120 minutes.
Makes 6 Servings

OK, maybe a little inconvenient for a resteraunt, but it tastes so great when it's done right.

Personally, I would enjoy a line of gluten-free and dairy-free foods. There are some veggies who do not partake.
A good line of diverse salads (like pasta salads, fruit salads and regular salads based around lettuce) and sandwiches would be good as well.
I think you should also include a log of good desserts.
Good luck!
