I'm going camping in a week or so. 4 days in a tent. I've camped before, but I've always been the type to bring a lot of cans of beef stew and stuff like that along. What are some good, varied foods I can bring to liven up the experience that won't break or make a mess, or require a lot of work?

So far, I've come up with instant oatmeal, hot dogs... and canned beef stew. :-)

You might make some tin foil dinners. If you do chicken i would precook the chicken and when having baked potatoes you might microwave them for five or ten minutes before you put them in. We put in anything from hamburgers and potatoes to shrimp stir fry. They are generally wrapped thrice, then cooked in a camp fire, but you can cook them on a stove or grill too if needed. Make sure you have a shove for fire cooking and a pair of gloves too. We also do a lot of dutch oven cooking that allows you to cook just about anything you want and brings different atmosphere and flavor. I hope this helps.

Fire = anything you can BBQ, just like at home. Steaks, hot dogs, hamburgers, chicken -- various kabobs are a good idea. You can use veggies and whatever meat on those.

Propane camp stove = anything you can cook on two burners at home. We have a griddle that fits over both burners and usually cook pancakes on it. We also bought a cast iron frying pan and cook all kinds of things. We normally stick to fish, potatoes, sausage, bacon, veggies, etc.

If you buy paper plates, there isn't that much mess. We just burn them in the fire. Bring two small buckets (one wash, one rinse) and a small bottle of dish soap. Wash your pan and silverware and everything is clean in a couple of minutes. Besides, you have lots of spare time when you are camping. Using some of it to clean up isn't going to hurt any.

how to make the salmon (chicken can be done the same) - cut up a lemon into 4-8 sliced and place on top fish. Wrap entire thing with lemons still touching fish in tin foil. Put on fire (where you can get it out easily). Check on it randomly until it's done (not sure about the time, I usually measure it by about the time it takes to put up the tent).

Have you thought of vegetables? Take a bunch of vegetables along like tomatoes, potatoes, onions, etc, anything you like and some aluminum foil. Cut up the vegetables into equal-sized pieces, wrap them tightly into the foil with the opening on top and just throw it onto the fire or the grill. No need to add any salt or pepper. After a while check the veggies. They should be done and tasty to eat. Of course you can always throw a pre-marinated steak onto the fire or the grill. You can even take salmon, put some thinly sliced onions to it and wrap it up into aluminum foil. Actually you can take almost anything with you to eat while camping even spaghetti if you have the adequate cooking-utensils with you.

Powdered milk as an ingredient in pancakes won't be noticed flavor wise and is a good choice for your meal. Powdered milk drank straight doesn't taste so hot but I use it all the time in breads, gravies etc It is a campers staple. Eggs will pack well and don't need to be refrigerated, just make sure they don't get cracked. Fruit like oranges and bananas travel well as does veggies like potatoes and squash. Butter should be fine unless it's super hot.

Go to a good sporting goods store and buy yourself the following:

10"-12" Cast Iron Dutch Oven
A charcoal chimney
Charcoal
A dutch oven cook book
a sourdough starter

With the items above you can make unbelievable food. Other campers will be drooling over the aromas. You can make quiche, one-eyed buffaloes, biscuits or pancakes for breakfast.

For dinner you can make tarragon chicken, Smoked Sausage Arizona and finish off with blueberry cobbler (you pick the berries) or lemon cake.

You can eat freeze dried crap or hot dogs on a stick or chicken enchiladas in your dutch oven.

I always take deer steaks and cook them over the campfire.
They are frozen when I pack my cooler and I put them in plastic bags on top of other things so I don't need as much ice. Campfire pancakes are good too. You can take the mix and cook them in a cast iron pan, but use butter instead of margarine.

I love camping and i got really burnt out on the hot dog thing so something pretty easy and different is pizza. just use pita bread, (pita bread will last much longer than any other) a small can of tomato sauce, cheese and a small stick of pepperoni. then just throw it on the grill, believe it or not it won't be much heavier than that can of stew.
