I use 2 tablespoons of cornstarch mixed with enough water or oil to make the batter the appropriate consistency... usually 1-2 tbs. Also, if the batter is a bit dry in the end, I just splash in a bit more water.

If you are talking breakfast, I drain and crumble extra firm tofu, and cook in in vegan margarine with cumin, onion powder, black pepper and red pepper for a kick. If you want a cheesy flavor, you can add nutritional yeast. I eat this buttered toast.

For baking, I use ground flax mixed with warm water. It gels up to the exact consistancy of an egg, and works great. Too bad it doesnt scramble!

1 egg - 1 banana
1 egg - 1/2 tbs of flax seeds (grounded) plus 1/4 cup of water.

1 egg - 1/2 cup applesauce
