Good questions. Shish-Kebabs are a Middleastern delicacy, specifically Arabic. Although Armenians also make them, I don't believe they are as good as the Arab made ones. I have been to numerous restuarants and I have to say Arabs make the best kebabs hands down. How did israel work its way into the question? They don't make kebabs.

I love the Lebanese verson of kofte kabobs.
But for the shish the Persians because they use herbs to season their meat.
I love the Egyptian Arab kofte kabobs and shish kabobs they are lightly seasoned with spices.

They can all be very very good. If you are looking for good resturants, try the following:
Chicago: Reza's (Persian)
Houston: Garson's (Persian)
Detroit: Cedarland or LaShish (both Arab)
If you want a good cookbook on how to make them try getting "A Taste of Persia" by Najmieh Batmanglij. It is about $14 on Amazon.com

I have a very nice friend and he makes awesome kabobs he's Armenian and lived many years in Turkey and Bulgaria.
So maybe he gets the best of both. He makes this skinless sausage and then sticks is to a wood skewer and grills them in low heat, its so good

Shish Kebab is a middle eastern recipe so they r the best in making them, Turks learned form the Arabs, and so did the rest of the people.
