It is an Italian dish made up of coarse ground corn simmered in water or broth like a porridge, but usually served savory rather than sweet.

1 1/2 cups polenta or corn grits..same grain..different name
5 cups water

bring to a simmer, cook over low heat till thick, add 1 cup cream, 1 handful grated asiago, parmesan, or whatever cheese you like, salt to taste...enjoy!

It is a kind of thick porridge that is today made with cornmeal(yellow or white) cooked with water, or stock and usually a bit of Parmesan cheese and cream. Often it is made so thick that a spoon can stand up unsupported in the pan. It is then spread into a thin layer in a baking pan, cooled, and cut into pieces. Then those pieces are fried, baked or grilled.

It is a staple dish in Northern Italy. It dates back to when corn was introduced to the region by he Venetians from America in the mid-17th century. It was originally thought to be made with chestnut flour or pearl barley. Polenta meant pearl barley in classical Rome.

traditionally used in italian cooking, polenta is cornmeal mush. it is mostly flavored with herbs, garlic, and chickenstock. it is a creamy dish, but you can also grill, or fry it, and cut it into shapes.
