5 cups water
bring to a simmer, cook over low heat till thick, add 1 cup cream, 1 handful grated asiago, parmesan, or whatever cheese you like, salt to taste...enjoy!

It is a kind of thick porridge that is today made with cornmeal(yellow or white) cooked with water, or stock and usually a bit of Parmesan cheese and cream. Often it is made so thick that a spoon can stand up unsupported in the pan. It is then spread into a thin layer in a baking pan, cooled, and cut into pieces. Then those pieces are fried, baked or grilled.
It is a staple dish in Northern Italy. It dates back to when corn was introduced to the region by he Venetians from America in the mid-17th century. It was originally thought to be made with chestnut flour or pearl barley. Polenta meant pearl barley in classical Rome.
