We're going to this outdoor July 4th symphony thing...What can I bring that's vegetarian but not boring?

Take about 5-6 ounces of goat cheese (1 log from the grocery store) and fold in 2-3 tablespoons of chopped herbs- I use thyme, oregano, parsley, chives, and/or basil-- whatever I have from the garden. Spread it on some flour tortillas or other wrap, and add some slices of roasted red or yellow pepper, and roll up like a pinwheel. Slice, but put it back together and wrap tightly in Saran for easy transport. You can also sub cream cheese, but it will be much milder. Sometimes if I find the baby sweet peppers at the store, I will roast them and stuff them with the goat cheese mixture and serve as an appetizer, but that may be too messy for a picnic. EIther way, it's really great.

I love to bring a great veggie sandwich. Lettuce, tomato, pickles, cucumbers, sprouts, a strong cheese... and then mix mayo, mustard & a little horseradish together for an AWESOME sandwich spread. It really makes the sandwich!

For the 4th, we're doing a tailgating bbq out at the beach where the do a firework show. I'm gonna grill up some veggie dogs & vegetarian chili and am also taking along fixin's for strawberry shortcake. YUM.

Veggie kabobs
Veggie Burgers
Vegetarian Baked Beans

Something different and delicious:

Bean Salad (Recipe Below)

Put the following in a bowl:
Your favorite beans from a can we use black beans and sometimes garbanzo or both. [You can also use Pinto or Kidney or a mixture.] - if using dry beans soak and prepare before hand.
Frozen or Fresh Green Beans
Frozen Corn
Bell Pepper (Red, Green and or Yellow) chopped
Red Onion chopped
[You can add or delete items from this list we use what we have on hand]

In a Separate Bowl mix equal parts Apple Cider Vinegar, Sugar, and Olive Oil (enough to coat the stuff in the other bowl)

Mix dressing into bean/corn mix, cover and chill. Best if made the night before but can be done right before if needed.

Hummus and fresh veggies! Buy some pre-made hummus at the grocery store (by fresh, not the bottled kind!), and put it on a tray with carrots, cucumbers, brocolli, red, yellow, and green peppers, and other fun yummy veggies. You could also bring along some fresh pita, or pita chips.

This is a yummy source of protein.

Heres a simple recipe for a delicious mixed veggie salad (:

MARINATED MIXED VEGETABLE SALAD

A variety of vegetables (carrots, cucumbers, peppers, celery, cauliflower, cherry tomatoes, etc), chunked
1 c. vinegar
1/4 tsp. seasoning salt
1 tbsp. sugar
1/4 c. salad oil

Chunk vegetables in a bowl and marinate 4 hours, stirring occasionally. If you use radishes, add them just before serving as they will fade. For marinade, combine vinegar, seasoning salt and sugar. Shake together vigorously and then add 1/4 cup salad oil.

If you know a nearby Japanese/Asian grocery, I would recommend this food item called "Chikuwa" (it's in wikipedia if you want to check). It's hollow and you could stuff it with maybe minced brocolli, or slices of bell pepper, or whatever veggie you have. They're finger food too, and it can be eaten straight out of the pack, so there's less prep time for you.

My son is Vegan and one great thing we discovered is grilled Portobello mushrooms. You wash the mushroom caps, marinate in Italian dressing for awhile, then grill like a burger. My son eats them in hamburger buns or pita.

Hummus and pita chips or just triangle pieces of pita with some crudites. I LOVE Hummus....at Trader Joe's you can get a platter w/ four tasty flavors! Best of luck!

vegetarian or vegan?
vegans are inconcievably difficult and honestly not healthy >_>
but pancakes are good ^_^...
you could put like peas and corn and chives in them...
or blueberries...
you could make dip bowls out of capsicum...
or like fruit salad in a watermellon ^_^...
you could spend ages trying to make carrot stick, capsicum slice tipees with lettuce leaves around with dips in them...
ok enough with the dips...
quice, wait that's boring...
spinich lasangua? wait they're not popeye...
what's that chinese thing with the stuff that you warp in lettuce and it's yummy?... I'm sure there's a vegetains version of that...
could you like roast some vegies? like alone not connected to any animals...
tacos... ^_^ you don't even have to actually make then vegetarian, just let everyone make their own, if they don't want meat easy ^_^...
I don't know =/ creativity's not my strong point.
