My fiance is a vegetarian, no big deal to me. I would love to cook for her, and I have no problem eating vegetarian food myself, but I am a meat eater too. I do, however, watch my carb intake. Where can I find some dishes that are low in carbs and vegetarian? FYI, she will eat eggs, fish, and drink milk products.

FYI, I have already given 3 of you bad marks for either questioning her decision on being a vegetarian, or being one because she eats fish. I am looking for constructive feedback, not bad-mouthing.

Pretty much any vegetarian diet is low-carb friendly. A vegetarian's diet should be mostly plant based anyway. Just make sure to get lots of good fruits and veggies, and since your girlfriend eats fish, it shouldn't be too difficult to come up with some recipes that will please the both of you. If you are going to eat pasta or rice, make sure it is whole grain and use it as a side to accompany vegetables, as opposed to making it a main dish.

Butter? Full of fat obviously so better to replace that with a thin scraping of soya spread or olive oil. Peanut butter is also fattening so I would cut that out. When I am trying to lose weight I have a mixture of scrambled smoked tofu (very high protein and low carb) mixed with a bit of soya milk and spinach and onions. I also add a dollop of fresh tomato sauce - the ones you get for pasta in the fridge section at the supermarket. I have this on a slice of wholegrain bread. For lunch or mid afternoon snack/meal I would eat something like a half plate of veggies/salad and a quarter plate of some kind of wholegrain such as millet, barley, quinoa or rice and the other quarter would be a high protein food like some kind of bean. For dinner I would have more tofu. No carbs after 6.00pm. You have to make your own mind up about the health benefits/health worries of tifu but I am ok with it.....

Yeah, if she eats fish, she is not a vegetarian. Vegetarians do not eat any animal flesh even if the animal isn't cute. Fish feel pain and suffering as much as any other animal. The fishing industry is responsible for some of the most environmentally damaging practices affecting our seas and oceans today.

However, I would stay away from the obvious, pasta potatoes, corn. I would just make salad. Or make her breakfast with a veggie omelette. Alot of veggies have carbs, so make sure you research what veggies you are eating. I think Ranch dressing has the lowest amount of carbs.

O'yeah and tell your GF that fish aren't swimming vegetables, and tell her to stop eating animals completely before calling her self a vegetarian.
