Me and my fiance love Italian food. We know we want stuffed shells and salad but we want a variety at our wedding. We are doing a dinner but morelike a buffet kinda thing. any ideas??

Wedding buffet of Italian food sounds like a great idea. Try dividing food into categories and then filling in the blanks.Example:
Heated dishes-
Pasta-Cheese stuffed shell with tomato sauce(you already know that one)
Meat-Italian sausage with peppers and onion,chicken breasts with mushrooms,or Scampi with butter sauce.Even a separate dish of meatballs in sauce.
Vegetable-Italian green beans,a mix of zucchini and yellow squash,or a veggie mix
Cold dishes-
You could have several including salads,pasta salads,marinated tomato salads,olives,crudites platters,cheese and meat platters,shrimp cocktail bowl.
Don't forget rolls,butter,grated Parmesan cheese.

The Italian weddings I've been to have separate dessert tables beside the food and wedding cake table. The dessert table is always loaded with little cookies and pastries,fruit-usually the work of Grandmothers,Aunts and Cousins.

I'd consider having meat based as well as vegetarian based pastas and two kinds of salad. Here are some ideas:

1. Baked ziti
2. Cannolini
3. Fettucini Alfredo
4. Linguini with Pesto
5. Torteloni with Marinara
6. Seafood lasagne
7. Grilled veges with lemon and basil
8. Caesar Salad
9. Green salad
10. Sliced tomatos, mozarella, and olive oil with basil
11. For desserts, mini cannoli, tiramisu

Why not do stuff shells, eggplant parm., sausage peppers and onions, salad, a cheese tray, and olive tray, a antipasta salad, do mini meatballs in spagetti sauce, a big salad and some rolls with butter.

We love Italian food in our home too. Have you ever tried Itaian Wedding Soup? Chicken or Eggplant Parmesan is also good choices.

Why not have a pasta bar, different salads, Cesar, fruit, spaghetti salad!
