Try using a vegetarian cheese such as Soy A Melt, Soyco and Soymage, NuTofu the list goes on and on. Also try making your own three cheese balsamic salad dressing using vegan cheese. Way more protein and less fat.

Try serving it over some pasta or rice.
I might add some red peppers to give it more color. The flavor would be an excellent addition. I am a big fan of onions, so maybe a few chopped green onions.

instead of topping it with cheese make a herb crust topping
breadcrumbs mixed with herbs ,lemon juice and olive oil all tossed together and serve it on top of your dish with your preffered cheese and place it in a oven or under a grill till your topping goes crispy

Don't cook it in the microwave......
less cheese more veg.....
more seasoning.....any??
bread crumbs to make it crispy.....
Add garlic.....
Serve it with long grain rice or cous cous or mashed potatoe (and parsnips, sweet potato, garlic)
