It doesn't have to be refrigerated. It just tastes better cold, so now most establishments keep it in the cooler. I've been bartending for over 20 years and never seen a bottle of Bailey's go bad yet, and up until a few years ago, everybody just kept it on the shelf along with all the other liquor! It became "trendy" for shots, so now most places keep it chilled, but that's more for convenience than because of concern about it spoiling. Back in the 80's and 90's, when someone (very rarely) wanted a chilled shot of Bailey's we'd have to pour it over ice, swirl it around, and then strain it out into a shot glass - a true pain in the a** on a busy night!!

From the Bailey's website: BAILEYS SHELF LIFE Baileys is the only cream liqueur that guarantees its taste for 2 years from the day it was made, opened or unopened, stored in the fridge or not when stored away from direct sunlight at a temperature range of 0-25 degrees centigrade. One of the keys to achieving this 2 year shelf-life is in our unique process of blending of fresh Irish cream with the spirits and the whiskey without the use of preservatives. The alcohol acts as a natural preservative for the product. Under normal conditions of storage Baileys has a shelf-life of 24 months. If you are concerned about a bottle of Baileys please check the Best Taste Before date on the bottle - all bottles carry a Best Taste Before date. This number is located on the bottom left hand side of the back label. Example : Code 11 20XY would mean that we guarantee the product would taste perfect until November20XY (XY is the year 2 years from the date of manufacture).

Yes. It's like milk, you need to refrigerate it. Unlike most alcohols, you should drink it within six months or so. I've never had it go bad, but you can never tell. As for recipes, you can try a Chocolate Cow -- half Bailey's and half Creme de Cacao or Godiva Chocolate -- in a shot glass.

I believe they say you don't have to refrigerate it. I have seen it go bad--the milk in it goes sour--but this was after several months. So I'd say to refrigerate it if you're not going to use it in a few weeks or months.
I love Baileys in coffee. Or by itself with a couple of ice cubes. It's good in hot chocolate. It's good over ice cream, in fact you can make a great milkshake with it.

Refrigerate anything that has cream and try to consume it as quickly as u can, the alcohol in it helps keep it longer than just plain cream but its always better to be safe than sorry.. If you're looking to make a treat with your Bailey's check this list out http://www.lisashea.com/lisabase/cocktails/alcohols/baileys.html .. good luck!

Bailey's with a hint of caramel is awesome on the rocks and also in your coffee as the creamer. I love it and i didnt refrigerate mine and it lasted a couple of months. Just store it in a cool place in the home.

If you're going to drink in reasonably soon [as in, the next few days], it should be fine. Bailey's usually tastes pretty nasty warm though, I'd stick it in the fridge.

I hope not. I just drank some of my unrefrigerated and opened baileys that had been on the shelf opened for months. It tasted fine. I haven't thrown up yet :).
