Toasted Pizzas
Make toast, then spread a lil spaghetti sauce and sprinkle cheese on top. Then microwave for about 15 seconds to melt cheese. Sometimes I add pepperoni slices to it. =0}

Pico De Gallo
Ingredients
3 medium tomatoes (firm to the touch)
1 green onion with the stalk. Finely chopped
3 jalapenos or serrano peppers (to taste)
1/2 cilantro bunch (about half cup or more chopped)
1 medium red onion
1 pinch of salt
Dice the tomatoes and onions into little cubes, the cilantro and jalapenos should be finely chopped.Once you've done this, you should toss all the ingredients together evenly. Optional: You can add a bit of fresh lemon or lime juice if you're going to serve the pico de gallo on fajita tacos or with seafood. Serve with chips and dip away...You can add a can of corn to this to add a bit of sweetness and color. Aprovéche!

A couple of things come to mind:
Finger sandwiches (say, cut two slices of bread twice diagonally to make 8 triangles (4 per slice), put on a bit of butter and a round of cucumber, or ham and cheese, or avocado and sprouts or...).
In a similar vein, you could make grilled cheese (with or without ham, tomatoes, basil, cilantro) in a frying pan and slice it into bits.
You can toast pine nuts in a frying pan (get the pan moderately hot, throw in the pine nuts, shake the pan every minute or so, watch closely, pour off when they start to brown).
You can cut mozerella cheese into rounds and put a sun-dried tomato on each one with a toothpick, with or without bread underneath.
You could take pieces of cheese (most any cheese should do), cover it with bread crumbs and oil, and fry it hot oil in a pan.
You can hard/soft boil or poach eggs and put things on them...tarragon, pepper, paprika, mayonnaise, ham.
But you're right...it's easier with an oven.

Ton of them. Put a little herb mix -- like Italian or Greek herbs -- on top of cottage cheese. Mix chocolate chips and a little cocoa into ricotta cheese. Eat carrots with hummus. Put a spoonful of peanut butter on top of an apple or inside celery. If you want something fancier, spread a layer of cream cheese on top of lox, roll it up and then cut it into little circles. Top with fresh dill if you can get it. Looks beautiful, easy to make for parties.
