I've used orange slices, lemons, apple slices, strawberries, mint leaves, parsley, rosemary and onion pedals among other things.

What are some other interesting ideas.

I feel food should be appealing to all the senses including visual.

You can always choose fresh (just picked/or bought) herbs that might go along with the flavor of the dish, so if the people want to ADD it to their meal, they can. Its just a thought.

Nasturtium flowers and leaves are beautiful as a summer salad, or as a garnish. Both the flowers and leaves are edible and have a nice fresh taste, a bit like radishes...bon apetit!

It really depends on what you are garnishing,Those fruit garnishes are good on cheese,french toast waffles, desserts etc.Different vegetables such as carrots, scallions, tomato flowers,Potatoes ,onions, strips of different color peppers Parsley and other herbs are good for meat. Lemon and parsley are good for fish. For salads some good choices are egg, olives a variety of other items can also be used

Fresh edible flowers are a nice garnish.. and fresh herbs are always a good choice (tip: quickly fry them to really bring out the color) ..

The most fun garnish i've had is parmesan cheese crackers.. just bake cheese in the oven until crisp. They taste really good too ;)

Using fruit that is made to look like flowers is great.
