Hey Keano, I remember when my husband and I attended a monthly covered dish supper thingy. The men often requested my husband to have me bring a dessert that they loved. I became known as "the lady who makes the wonderful Buttermilk Pie." One lady began pestering me to give her the recipe b/c her husband wanted it. So, I decided I'd have to give it to everyone as I didn't want anyone to be offended with me. Sometime later, this lady, scolded me in front of all the ladies and said, "you left out some of the ingredients!" It was a very, very simple recipe, and I didn't leave out anything. I was speechless and taken aback at her rudeness. One of the other ladies ask if she'd put it on the top or bottom shelf in the oven? [it was a custard type pie] And that was the problem; she'd put it on the top shelf and the crust was burned and the custard was not done when she took it out of the oven. I just assumed everyone knew how to bake a custard pie. From then on, I would not give out anymore of my recipes..... to be accused of with holding a part of the recipe when they were at fault; and blaming me!! I too am a cooking school graduate and certified chef. But I rarely tell anyone, anymore. They expect so much from you... wanting you to pull a rabbit out of the hat like you are a magician. There's quite a difference between cooking at home for one or two and commercial cooking in a food service establishment, where you have numerous cooks to assist you on a large scale. I just don't have the stamina anymore.

I agree with you, whenever I give any recipes here they are my own recipes and how I have learnt how to do things over the years....... however there are many lazy people out there whose interest in cooking is not the process of cooking itself but just getting the job done........ hence recipes posted etc...... perhaps these are 2 sides of the same coin, one book I read said that the recipe is a guideline only and if there is an ingredient in there that you dont like........use another, how do new recipes and new dishes evolve............ for me the fun is in the making and I do use recipe books as a guide and have come up with some real corkers over the years and also had some spectacular flops too............ the day you stop learning is the day you die..........good question

I agree with you- but I have to say, even though I don't appreciate the 'cut and paste' recipes most of the time (because I could have googled that myself), they are at least better than when you ask a question and someone says "try allrecipes" or just leave you a link to a recipe home page, not even a link to a specific recipe... now THAT I could have done, so at least an actual recipe, whether it's their own or not, is better than that.
And who in the regular population, not chefs, knows that you have to bake a custard pie on the bottom rack?? Soooo not common knowledge.

I too cook for a living and although I don't really look at the "cut and paste" recipes it does chafe me when people ask for a way to cook something and you have "answerers" criticizing other people's answers.

Keano - just let us, the community, answer your question. Why don't you answer the food & drink questions? Hmm... Let me think. I bet that you know a bit too little about the drinks and ghow to pair them with food. You think you know everything about the food, but I doubt it - nobidy knows everything. Can you make fish tacos with huachinango in a mango sauce? What about Ukrainian pierogi with wild mushrooms and cabbage? Sounds too rustic? Well, can you make crepes with Nutella cream or what about potato crepes with caviar? Don't be discouraged, keep cooking your lovely recipes but spare us your oh so nosy and flabberstaberened answers.
