The baby is your first cousin, once removed. (assuming the mom is your first cousin). It's based on how many generations you go back for a common ancestor. This site explains it well:

Your grandparent is the baby's great grandparent- so that is first cousin once removed.

Second cousin. Although, in some cultures (some of my friends) say that their cousins' babies are their nieces and nephews.
