Nothing lasts forever but if you keep it air and sunlight free it will last a long time. After a while, exposure to air will make Maple syrup crystalize and sunlight breaks down the natural sugars in it and will make it crystalize as well. It will normally be good for about a year in the fridge after opening though.

I've heard of mold growing on the surface of some maple syrups that have been around a while. But I read that you can simply scrape the mold off and it's still good. If you think about it, no living organisms can live in that concentration of sugar. that's why it won't spoil. Same with Jams and Jellies. You can keep those around for a long time.

My husband grew up on a farm and they had a sugar shack and made their own maple syrup. Their storage method was to refrigerate it to make sure that it does last forever. If it does crystallize, just pour the amount you want over into a microwave safe container and heat it for 20-30 seconds and it will liquify the crystals. I only use pure maple syrup now, I never knew what I was missing. :o)

Maple syrup can mold after it is opened, even in the refrigerator. I will mold quickly in hot, humid weather if left out but takes months to mold if kept in the fridge.
Like any syrup, if it is left at room temperature long enough a bit of yeast will get in it from the air and it could even ferment.
Bottom line though, keep in in the pantry until you open it and in the fridge after it is opened and use it within a year or so after you open it and you won't need to worry at all.

I have tried maple syrup just 2 twice, in my life one
time in coffee another time I do not know how, but BOTH TIMES GAVE ME HEADACHE.

It really should be refrigerated, however the sugar content of the syrup should keep it, make sure that there isn't anything nasty around the top of the bottle
